A salad with barley and vegetables can be a complete dish for a hearty dinner or breakfast. Thanks to the vegetable mix and sour-salty dressing, pearl barley is revealed to us in a completely new way.

Choose vegetables of different colors, use as much greens as possible. As a result, the dish looks very bright and appetizing, even those who do not like barley at all will want to try it.

Prepare the barley, vegetables, herbs and ingredients for dressing.

Soak the pearl barley in water for several hours (you can overnight) so that it swells a little and becomes softer.

Rinse the barley, place in a saucepan, fill with a new portion of water. After boiling, remove the foam, salt. Reduce the fire to the minimum. Cook the cereal for the next 40 minutes, stirring frequently. After cooking, fold it onto a sieve, pour over with cold water, cool.

After cooling, transfer the pearl barley to a deep plate. Cut the cherry tomatoes into 4 pieces. Add them to the barley.

Peel sweet peppers from seeds, cut into short strips.

Squeeze canned corn from the marinade, add to the main composition.

Rinse greens, chop finely, throw into salad.

Season everything with soy sauce, olive oil, lemon juice. Mix thoroughly. Season the mixture with salt and pepper. Place the salad in the refrigerator for 30 minutes so that the ingredients absorb the dressing and cool.

  • Soy sauce - 1 tablespoon
  • Lemon juice - 2 tablespoons
  • Salt, pepper - to taste
