If you have goat milk available, you can easily create curd from it by adding lemon juice. This method is suitable when there is a lack of free time. In general, you don't need to add lemon juice if you place the jar of milk in a warm place for two to three days to sour.
After collecting the curd, do not pour out the whey. On its basis, you will get lush and aromatic pancakes with which you can feed your whole family for breakfast or afternoon tea.
To get dryish curd, squeeze it longer, to get wet - a little less. In any case, you can serve it for breakfast or dinner as an independent dish with honey or berries, or you can prepare other dishes / pastries from it.
The shelf life of such homemade cottage cheese is 2-3 days when stored in the refrigerator.
Ingredients:
Goat milk - 2 l
Lemon juice - 2 tablespoons
Salt - 1 pinch
Step by step recipe:
Prepare food.
Pour the milk into a cauldron or saucepan with a non-stick bottom. Try to use a container that is larger than the milk volume. Gently squeeze the juice out of the lemon and pour it into the cauldron, add a pinch of salt.
If you wish, you can replace freshly squeezed juice with concentrated juice, the main thing is to dilute it with water before adding it to milk.
Place the container on the stove with medium heat and bring it to a near boil, but don't let it boil! Optimally - warm up to 80 degrees.
Curd curd will form on the surface of the milk. Try not to stir so that they do not separate into small grains.
Cover the colander with gauze in two layers so that the ends hang down - you can hang a bag of cottage cheese behind them to drain excess whey. Place a colander in a deep bowl and pour the curd mass from the cauldron into it. Be careful not to burn yourself.
Lift the edges of the gauze and tie in a pouch. Place it under a press or hang it for 1-2 hours to glass the serum.
Then put the squeezed cottage cheese in a bowl or bowl. From 2 liters of milk, about 450-500 g of cottage cheese and about 1.4-1.5 liters of whey are obtained.
Serve fresh goat's milk cottage cheese. Use it to prepare snacks, sweet desserts, and various pastries.
