Fish with zucchini in the oven

If you love fish as much as I do, then this recipe is for you. Be sure to try this simple dish. The fish turns out to be the most tender and very juicy. The zucchini stays slightly crispy, while retaining all its nutrients, and the tomato gives the finished dish its slightly sour taste.

It is best to take sea fish and preferably white, with a minimum amount of bones - this is what turns out to be the most delicious. If you don't want to deal with bones at all, then buy fillets, it will be convenient both in preparation and during the meal.

Ingredients:

Flounder - 300 g

Zucchini - 150 g

Tomato - 2 pcs.

Mayonnaise - 1 tablespoon

Salt to taste

Ch.m. pepper - taste

Lemon juice - 1 tablespoon

Hard cheese - 80 g

Lean oil - as needed

How to cook:

Prepare all the necessary foods from the list. As I said, any white fish is suitable for this recipe, preferably sea fish, it cooks faster and has very few bones in it. I like to use perch, halibut, pangasius, tilapia, or small flounder. I took the last one today.

Clean the fish, cut off the head, remove all entrails. Rinse under running water. If desired, you can trim the tail fins with kitchen scissors. Remember to wash and dry the vegetables.

Line a baking dish with foil, glossy side up. If you are not very sure of its quality, then it is better to lightly grease it with lean refined oil, otherwise the skin of the fish may stick to it tightly.

Place the flounder on the foil. Sprinkle it well with lemon juice. Season with salt and pepper to taste on both sides and in the belly.

Now, on a special grater, chop the zucchini into very thin circles. Place them on top of the fish in the form of scales.

Many varieties of white sea fish are a little dry, so I lightly grease the zucchini with a delicious fatty mayonnaise, but if you want a dietary meal, then you can skip this step. Lightly salt and pepper a layer of zucchini.

Cut the tomatoes into thin slices. Spread them over the courgettes.

Sprinkle a layer of tomatoes with grated hard cheese and send the fish dish to the oven preheated to 180 degrees for 25-30 minutes. Bake on top and bottom heat.

Use a kitchen spatula to gently transfer the flounder to a large flat dish and serve with fresh herbs.
