Appetizing beef liver pancakes are not only tasty, but also very healthy. The offal contains iron, which significantly raises hemoglobin, so those who suffer from anemia should definitely include such a dish in their weekly diet. Moreover, beef liver can be replaced with pork / chicken. The main thing is that you should like the pancakes to taste.

Beef and pork liver can be bitter - soak the purchased product for at least 1-2 hours in water or milk of any fat content. For chopping, use a blender or meat grinder, food processor. In liver dough, small pieces of offal are acceptable, but not large ones, so that they are fried with pancakes.

Ingredients:

  • Beef liver - 300 g
  • Milk - 200 ml
  • Chicken egg - 2 pcs.
  • Wheat flour - 4 tablespoons
  • Vegetable oil - 2 tablespoons
  • Salt - 3 pinches

Pre-soak the liver, then rinse thoroughly in water and cut off the films and veins. Cut into small pieces and place in the bowl of a chopper, food processor. If you are using a meat grinder, screw a grate with small holes into it, not large ones.

Knock the liver mass into an almost homogeneous mass and transfer to a deep salad bowl or bowl. Drive in chicken eggs there, add salt and pour milk of any fat content. Whisk the contents of the container with gentle movements.

Then add the sifted premium wheat flour and stir in just as gently. It is desirable that no lumps form in the liver test. Pour sunflower oil into it and stir, leave for 20 minutes.

Preheat a frying pan, grease it the first time with oil and pour in a portion of the dough. Bake the pancake on each side for 1 minute, then remove it onto a plate with a spatula. Pour in the next batch of dough without greasing the surface of the pan with oil.

In this way, fry all the liver pancakes from the remaining dough. Then place them on a plate / platter. It is not necessary to grease such pancakes with butter.

Serve the liver pancakes warm. They can be supplemented with various sauces and fillings: cheese, sauerkraut, pickles, etc.
