Revealing the secret of how I make a cool imitation of bark

Cake "Log" is a traditional dessert, which replaced the ancient pagan rite of burning a Christmas tree log, which protects the house from misfortunes. As a rule, it is prepared on the basis of a biscuit roll, and decorated with a cream that imitates the bark of a tree.

Few people know about ancient traditions now, but few will refuse a piece of delicious Christmas dessert.

The confectionery embodiment, which replaced the wooden log, is being skillfully brought closer to its original version. You can imitate the bark of a tree using a cream, cutting cracks in it and creating a similar pattern, or thin slices (of different shapes and sizes) of chocolate glaze.

In this recipe, I will share my version of the Christmas log.

I combine eggs and sugar in the mixer bowl. Beat until light, fluffy mass.

I combine flour with baking powder and cocoa powder, sift through a fine sieve.

Gently stir the biscuit dough with a silicone spatula from bottom to top.

You should not knead the dough for a long time, but dry ingredients should be completely mixed in.

Preparing a baking sheet for baking a biscuit. I cover it with baking paper, grease it with a little vegetable oil. I spread the prepared dough and distribute it evenly over the entire surface of the mold.

The thickness of the dough should be the same everywhere so that the biscuit is baked evenly.

Preheat the oven to 180 degrees and bake the biscuit for 15 minutes. The main thing is not to dry it out.

I transfer the finished cake together with the paper to the countertop. I cover it on top with a clean kitchen towel and roll it all together. In this form, I give time for the biscuit to cool completely.

For cream, I boil condensed milk in a jar on my own for 3 hours and let it cool completely. I take out the butter from the refrigerator in advance.

I unwind the cooled biscuit, remove the paper and towel.

I saturate the biscuit with sugar syrup, cooked from 6 tablespoons. orange juice and 4 tablespoons. Sahara.

Beat the boiled condensed milk until a homogeneous and more airy consistency.

Continuing to beat, add soft butter in portions.

Since I will imitate the bark of the tree with chocolate plates, I leave the color of the cream light. If you create the bark with a cream, it should be made darker by adding 1 tbsp. cocoa powder.

I spread half of the cream on an unfolded biscuit cake and distribute it over the entire surface. I spread the peeled bananas on the edge and roll the cake into a tight roll.

From the edges of the roll I cut pieces of different sizes and put them on the sides. They will imitate tree knots.

I coat the cake on top with the rest of the cream.

To simulate the bark of a tree, melt dark chocolate in a water bath, pour it onto parchment and spread it in a thin layer. I cover it with another sheet of paper and fold it into a roll. I put it in the refrigerator for solidification.

After the chocolate has frozen, I unroll the roll, while the chocolate breaks into pieces of arbitrary shapes and sizes. I put them on top of the cream on the cake.
