To help my wife cope with the zucchini harvest, I made a chocolate cake. I share a step by step recipe.

I recently talked about making a chocolate zucchini muffin. The cupcake turned out to be very tasty, and I tried to make a cake based on it.

I was worried that due to the dense crumb of the crust, the cake would be too dense, but it seems in vain. Despite the dense crust, the cake cut easily.

I tasted it with my wife and father-in-law, and no one understood that there were vegetables in the cakes. But they praised the juiciness of the base. I will not delay, let's cook!

Step by step recipe on how to make zucchini cake

Ingredients per form 18 cm in diameter:

  • Zucchini 250 g
  • Flour 100 g
  • Almond flour 60 g (can be replaced with chopped almonds or even excluded)
  • Cocoa 22 g
  • Baking powder 3 g
  • Soda 2 g
  • A pinch of salt
  • Sugar 80 g
  • Eggs 2 pcs
  • Kefir 25 g
  • Butter 50 g
  • Dark chocolate 50 g
  • Lemon juice 10 g (quarter lemon)
  • Zest of half a lemon

Beat eggs with sugar until lightening. I pour in the chocolate, melted with butter, and stir.

Add zucchini grated on a coarse grater, kefir, zest and lemon juice and mix.

I pour in all the remaining dry ingredients. Stir until smooth, pour into a mold and send it to bake for 30-40 minutes at 180 ° C.

I give the finished cake time to cool completely, cut it in half lengthwise, and you can collect the cake.

Cream

  • Curd cheese 220 g
  • Butter 74 g
  • Powdered sugar 65 g

Beat all ingredients with a mixer until fluffy. Since the cream is quite dense, it is important that the mixer is powerful. A blender whisk won't work here, it just won't do it.

I use a Phillips hand mixer. It has good power and sturdy whisks that can whip anything. If you are planning to buy a mixer, below I will leave a selection of the best manual units on Yandex. Market. And I go back to making the cake.

I distribute a little cream over the dish where I will collect the cake. I do this so that the cake does not travel to the dish during assembly.

I spread the cake and cover with half of the cream. I distribute with a spatula. I spread the second cake on top and coat the cake with the second half of the cream.

I level the cake with a pastry spatula. First, I level the top of the cake, then the sides and then distribute the excess cream from the edges to the center. To make it clearer, flip through the gallery with photos below.

I decorate the cake with chocolate chips and chocolate pills. Now I send the cake to the refrigerator for 1-2 hours to stabilize the cream. Let's show you what a cutaway cake looks like.
