Culinary portal "Vilkin" celebrates two years of friendly relations with the platform "Zen" # Yandex Zen.

In this regard, we invite everyone to tasting a chocolate cake with a symbolic design. The dessert turns out to be not sugary, so it can be complemented with a sweet decor for sugar lovers, with cakes soaked in cream, and the apple brings its own refreshing note.

Ingredients

For a biscuit:

  • Wheat flour - 500 g
  • Cocoa powder - 100 g
  • Sugar - 200 g
  • Chicken egg - 4 pcs.
  • Ground coffee - 1 tbsp. l.
  • Serum - 300 ml
  • Soda - 2 tsp l.
  • Vegetable oil - 5 tbsp. l.
  • Apple - 1 pc.

For the cream:

  • Sugar - 6 tbsp. l.
  • Milk - 1 l
  • Rice flour - 8 tbsp. l.
  • Corn starch - 4 tbsp. l.
  • Vanillin - 1 g
  • Curd cheese - 140 g
  • Butter - 100 g

Step 1: First, prepare the required ingredients for making a biscuit according to the list. In the absence of curd / cheese whey, replace it with kefir. Instead of ground coffee, you can use instant coffee, only double its volume. Choose any apple to your taste and color.

Step 2: Sift wheat flour and cocoa powder through a sieve to remove caked lumps.

Step 3: Heat the whey, add coffee, stir and leave to infuse. Then dissolve baking soda in this drink. Add any vegetable oil without a bright odor.

Step 4: Beat chicken eggs with a mixer or a kitchen processor with granulated sugar into a fluffy lightened mass.

Step 5: Stir the flour mixture into the egg cocktail in portions, alternating with a set of liquid ingredients.

Step 6: Knead everything vigorously until smooth, but not for long.

Step 7: Cover a baking dish (diameter 20–24 cm), if it is not made of silicone, with baking parchment and pour the dough into it. Bake the biscuit in an oven preheated to 180 degrees (60–90 minutes). It is important to focus on the characteristics of your oven and a dry speck. Cool the finished biscuit for 10 minutes in the form, then remove and completely cool on the wire rack.

Step 8: Wrap the cooled biscuit in plastic wrap until requested. Prepare the necessary ingredients for making the cream.

Step 9: Sift rice flour and corn starch through a sieve, add granulated sugar and vanillin, mix. Pour milk into the dry mixture, mix thoroughly and boil, stirring constantly, until the consistency of thick jelly. You can cook the cream in the microwave, stirring every minute, at maximum power (my 800W). Cool, covering with a film in touch, and then stir in the cream cheese.

Step 10: To design in the style of a Zen logo, the cake should have a square design, so cut off the top and, using a stencil for convenience, make even cuts of the sides, leaving the corners slightly rounded. Cut the resulting "cube" into three cakes and wrap them again in foil or put in a bag.

Step 11: Remove the peel from the apple and grate on a fine grater or puree with a blender. Crumble half of the biscuit slices and stir in the applesauce. Add enough cream to this mixture so that the mass can mold and keep its shape.

Step 12: Cover the stencil according to which the biscuit was cut with a film and distribute half the volume of the resulting mass over it in an even dense layer (this is an additional cake). Roll the plastic over the edges and chill in the refrigerator for a couple of hours. Do the same with the second part of the mass. In the refrigerator, they can be stacked neatly on top of each other.

Step 13: Collect the cake, alternating biscuit cakes with biscuit-apple cakes, applying 4-5 tbsp on each layer. l. cream. To prevent the cakes from slipping, stick 4-5 barbecue toothpicks / skewers vertically to hold them together. Put in the refrigerator to soak the cakes.

Step 14: Add room temperature butter to the remaining cream and cover the cake. Decorate it to your liking. You can sprinkle with crumbs from the remaining biscuit scraps.

Step 15: For the design in the Zen platform style, two colors of mastic were used. The cake is ready!
