Potato patties are one of the most popular fast food dishes, especially in the CIS countries, where you can buy them at any stall or fast food cafe. But why overpay and purchase the product that you can cook at home, having yeast dough and potato filling on hand.

The dough can be easily purchased at a supermarket with a baking parlor or at a bakery. But you can create the filling in your kitchen in just 25 minutes - in the recipe we will tell you how it is prepared and reveal a few secrets.

Often people love the filling in the pies even more than the fried dough, because it turns out to be very tasty and juicy - this is exactly what you will create!

Ingredients:

- 500 g of potatoes of any kind;

- 3 bay leaves;

- 1 onion;

- 20 ml of vegetable oil;

- spices to taste.

Preparation:

1. From this minimum of ingredients, a delicious potato filling for pies is obtained. You can use both early varieties and late potatoes.

2. Peel vegetables by peeling or cutting off and immediately placing peeled tuber one at a time in water - this is especially true for early varieties of potatoes, which, upon contact with air, quickly darkens.

3. Rinse the peeled tubers and cut them into slices, placing them in a saucepan or cauldron, stewpan. Add salt to taste and bay leaves, cover with hot water and place the container on the stove, turning on maximum heat.

4. Bring to a boil, remove any foam, reduce heat and cook the sliced ​​potatoes for about 15-20 minutes, until tender. Then drain half of the remaining liquid in the container.

5. Remove bay leaves and smooth out the slices with a boiled potato press or other tool. If you wish, you can add warm milk if there is not enough liquid, but remember that mashed potatoes should not be liquid, otherwise you will not be able to form pies - the filling will crawl out over the edges. You cannot add cold milk - due to the temperature difference, the potato mass will turn gray and take on an unattractive look!

6. Peel the onion and rinse in water. Heat a frying pan and pour odorless vegetable oil on it. Cut the peeled onion into small cubes and place in the pan.

7. Fry only until soft, lightly browning. There is no need to fry the onion slices - it should be soft and felt in the filling. This will take about 2 minutes. Remember to stir to avoid burning the onions.

8. Put the sautéed onion in mashed potatoes, season with salt and pepper to taste, mix gently.

9. Cool the potato filling to room temperature and place in a deep bowl or bowl to make it easier to work with. It remains to create delicious and mouth-watering pies!
