Sauteed vegetables with zucchini

Saute is an ideal dish for vegetarians, as it can be prepared with a combination of different vegetables and mushrooms. The classic recipe includes, in addition to zucchini, also eggplant, but the version of the dish with tomatoes and bell peppers turns out to be more juicy and sweet, with less calories. I recommend taking young zucchini. Serve sautéed either as a meat / fish addition or as a stand-alone fasting meal.

Ingredients:

Zucchini (zucchini) - 600 g

Carrots - 2 pcs.

Tomatoes - 300 g

Sweet pepper - 1 piece

Bulb onion - 1 piece

Vegetable oil - 50 ml

Fresh basil - 1 sprig

Salt and spices to taste

Step by step recipe:

Step 1 - Prepare products according to the list.

Step 2 - Rinse and clean the vegetables. Cut - carrots into slices, small onion cubes, garlic slices.

Step 3 - After cutting out the stalks, cut the tomatoes into large pieces. We clean the sweet peppers from partitions and seeds, cut into not very large bars.

Step 4 - Peel the zucchini or zucchini from the skin and seeds, if they are already ripe. Young fruits can be left unpeeled. Cut into pieces, also not very large.

Step 5 - Now that the vegetables are ready, let's start cooking the sauté. Heat the oil in a frying pan, first of all fry the onions with carrots and bell peppers. Make the fire medium, cover with a lid, fry until a transparent onion, this takes about 5-7 minutes. Do not forget to stir vegetables periodically.

Step 6 - Add zucchini, stir, fry for a couple of minutes, also covered.

Step 7 - Then put the tomatoes into the pan, salt and season to taste, and then toss in the fresh basil leaves. Stir, close the lid and continue cooking over medium heat for 15 minutes.

Step 8 - When we are already preparing zucchini with tomatoes, it is often not necessary to stir, otherwise you can turn everything into porridge. Five minutes before the end of cooking, stir the saute once, taste for salt. After removed from the heat, let the dish brew for another 5 minutes and can be served.

Step 9 - Sauteed zucchini is ready.
