Without modeling, breading in breadcrumbs or flour and frying in oil in a pan, we quickly prepare dietary, but very tasty curd cheese pancakes in the oven. These are good for breakfasts, children's snacks, and together with berries, whipped cream or ice cream - as a healthy dessert.

Ingredients:

Cottage cheese - 200 g

Sugar - 2 tbsp. l.

Eggs - 2 pcs.

Flour - 2 tbsp. l.

Butter - 10 g

Step by step recipe:

Step 1 - To bake fluffy cottage cheese pancakes at home, take the products on the list. Low-fat cottage cheese is good for this dish, but the result will not be the best. Sweeter products will have a drier texture and less expressive flavor. I advise you to use cottage cheese 9% and higher, then you can feel the fermented milk aroma, and the cheesecakes themselves come out not only airy, weightless, but also very tender, close to soufflé. Toss in a pinch of salt and / or vanilla sugar, ground spices, if necessary.

Step 2 - Preheat the oven to maximum. Meanwhile, separate the egg yolks from the whites. We mix the first with a portion of granulated sugar and cottage cheese, grind to a homogeneous creamy consistency. We place the proteins in another container, you can add a little salt.

Step 3 - Pour two tablespoons of wheat flour to the curd mixture, knead the thick mass. In parallel, until stable, but light peaks, beat the whites.

Step 4 - Lastly, we introduce protein foam into the dense dough, in two or three steps, thereby liquefying the mass. Thanks to the beaten egg whites, we end up with fluffy cottage cheese pancakes.

Step 5 - Thickly cover the inside of the silicone molds with soft, melted butter that does not allows the dough to stick and burn, and additionally impregnates each with a delicate aroma product. Fill about half with dough. We send it to the oven already hot by that time, bake at a temperature of 190 degrees for about 25 minutes until it sets completely.

Step 6 - Curd pancakes with a minimum content of flour increase in volume, rise, but quickly settle when cooled. Do not be alarmed, the taste does not deteriorate at all from this. We take out from the forms.

Warm or chilled, we serve airy and tender cheesecakes with jam, sour cream, honey, under a layer of powdered sugar, with berries / fruits, chocolate of your choice.
