Delicious salad of fresh vegetables and herbs for meat, poultry and, simply, for self-serving as a light and low-calorie raw meal. Use a seasonal or greenhouse harvest and remember that the more different textures, flowers in one plate, the more attractive and appetizing the dish.
Ingredients:
Bulgarian pepper - 2 pcs.
Cucumbers - 3 pcs.
Purple onion - 0.5 pcs.
Salad mix (Frize + arugula) - 100 g
Balsamic vinegar - 1 tbsp l.
Vegetable oil - 2 tbsp. l.
Dill, parsley - 2 branches each
Salt, black pepper - to taste
Step by step recipe:
Step 1 - To make a cucumber and bell pepper salad at home, take the foods listed. The dressing can be changed and thus get new flavors every time. In my recipe, in addition to salt with hot ground pepper, vegetables are flavored with liquid balsamic vinegar and refined sunflower oil. If you like it more spicy, chop a clove, add mustard or chili (cayenne pepper). For a spicy note, include a reasonable amount of rosemary, sage, or thyme in the salad. Also, a lot depends on the oil: sesame leaves a nutty flavor, olive oil will become universal and softening for any spices. In addition, vegetable oil is often replaced with heavy cream or sour cream, mayonnaise.
Step 2 - If necessary, wash the frisee and arugula leaves in cold water and dry on a paper towel, then transfer to a spacious bowl. Cut clean cucumbers into circles of the same thickness (about 3 mm). I recommend peeling the tough and bitter skin.
Step 3 - Chop the onion very thinly - choose from moderately harsh, lettuce varieties to "teardrop" onions, all as desired.
Step 4 - Cut the sweet pepper into rings or bars, strips, the main thing is to clean the seeds and cut off the soft inner partitions. If possible, combine peppers of different colors.
Step 5 - Chop the fleshy bell pepper into short bars, also without seeds.
Step 6 - To enhance the flavor, add parsley and dill leaves. Salt, pepper, pour in balsamic vinegar and vegetable oil. Stir and taste. I note that balsamic stains vegetables and herbs with a dark shade, if necessary, pour in light / white wine vinegar or lemon juice.
Step 7 - Transfer the fresh salad with bell peppers and cucumbers to a clean plate and serve.
