You will not surprise anyone with ordinary minced meat cutlets. Everyone knows how to cook them. But today I will tell you how to cook meat cutlets with the addition of zucchini and share some secrets.

Grated zucchini gives juiciness to the finished dish, and semolina - softness and splendor. If you want to get a beautiful golden brown crust, add starch to the minced meat.

You need to fry the cutlets over low heat so that they have time to fry not only outside, but also inside. They can be served with any kind of porridge, potatoes, pasta or vegetables.

Ingredients:

Minced meat - 500 g.

Zucchini - 200 g.

Ground black pepper - to taste

Salt to taste

Bulb onion - 1 pc.

Garlic - 2 cloves

Chicken egg - 1 pc.

Semolina - 2 tablespoons

Potato starch - 1 tablespoon

Vegetable oil - for frying

Step by step recipe:

1. Prepare the required set of ingredients. Choose young zucchini, without thick peel and hard seeds. Minced meat is suitable for pork, beef or mixed. You can buy it in the store or prepare it yourself.

2. Add the onion and garlic scrolled through a meat grinder to the minced meat.

3. Wash the zucchini, cut the tails and grate on a medium grater. Let them stand for a while, then squeeze out the liquid. Add the squeezed mass to the minced meat. If the zucchini are not young, then peel them of hard peels and seeds.

4. Beat in an egg, salt and pepper to taste. Add semolina and starch. The semolina will add looseness and puffiness to the minced meat, due to which the cutlets will turn out to be soft and juicy. And thanks to the starch, the finished dish will have a beautiful golden color.

5. Mix the minced meat thoroughly and beat it on the bottom of the bowl. Beat until smooth and smooth. Tighten the bowl of minced meat with cling film and leave for 10 minutes at room temperature so that the semolina has time to swell.

6. Pour vegetable oil into a skillet and heat it. Form small round or oval blanks, fry them over low heat for 3-4 minutes on each side.

7. Put the finished cutlets on a paper towel to get rid of excess oil. Delicious, ruddy and juicy cutlets from minced meat, zucchini and semolina are ready.
