With the arrival of autumn and the first cold weather, you involuntarily recall the traditional cuisine and its vegetable salads. The most favorite of them, of course, is the vinaigrette. Personally, I really love the version of this dish with sauerkraut, it goes well with any meat dish - baked, boiled or fried. It's also just the perfect lean salad, good for weight loss diets, and is loved by vegetarians.
Ingredients:
Beets - 400 g
Potatoes - 400 g
Carrots - 80 g
White onion - 50 g
Sauerkraut - 200 g
Sunflower oil - 4 tablespoons
Salt to taste
Ch.m. pepper - taste
Preparation:
1. The cooking time for the vinaigrette can be significantly reduced if you boil the vegetables in advance, for example in the evening, and simply cut them the next day. Vegetables must be thoroughly washed under running water with a hard kitchen sponge. Then put them in a deep saucepan or cauldron and cook until moderately soft, checking the readiness with a knife or wooden skewer. For potatoes and carrots, 20-25 minutes will be enough, but beets can be cooked for about an hour.
2. First of all, I chop the sauerkraut, so it will be easier and more convenient to eat it in the finished salad. I put it in a deep large bowl and add onion chopped into small cubes, mix. While the rest of the vegetables are being cut, the cabbage will pickle the onion with its acid and it will not be spicy.
3. Peel vegetables with a knife or hands - as convenient.
4. In the vinaigrette, I like to have them cut into medium cubes, so we cut the potatoes.
5. Add carrots cut into the same cubes into the bowl.
6. Add the chopped beets last. I do this so that she does not have time to color the rest of the salad ingredients too much, but if this does not bother you, then the sequence of cutting vegetables does not matter.
7. Salt and pepper the salad to your liking, pour in the aromatic vegetable oil.
8. We mix all the ingredients. By the way, I really like the vinaigrette with linseed or sesame oil, but with olive oil it works very well too.
9. That's all, lay out the vinaigrette in portions or serve in a large traditional salad bowl.
