Thanks to pumpkin, manti comes out juicy and tasty, with an indescribable aroma. The dough for them is plastic and molds well, after cooking it is soft and tender. It doesn’t matter if you don’t have a cooker, this dish can be cooked in a steamer or multicooker.
Ingredients:
Minced meat (pork) - 250 gr.
Minced meat (beef) - 250 gr.
Pumpkin - 200 gr.
Bulb onions - 2 pcs.
Wheat flour - 2.5 st.
Chicken egg - 1 pc.
Water - 200 ml.
Refined vegetable oil - 1 tsp into dough + for greasing the mold
Salt and cumin to taste
Step by step recipe:
Step 1 - Prepare the required ingredients according to the list. If there is a fat tail, add it to the minced meat.
Step 2 - Pour water into a bowl, break the egg.
Step 3 - Add salt and vegetable oil. Mix well.
Step 4 - Add the first 1.5 cups flour to a bowl, mix with a fork.
Step 5 - Then, for 8-10 minutes with the gradual addition of flour, knead the dough, it should become smooth and elastic. We wrap it in cling film and put it in the refrigerator while we prepare the filling.
Step 6 - Peel the pumpkin and remove seeds. We cut it first into thin slices, then into strips, and then into small cubes. We also peel onions, rinse and chop with a knife or on a medium grater.
Step 7 - Combine ground pork and beef with pumpkin and onions, add salt and spices. For juiciness, pour in 50 ml of water, mix well.
Step 8 - Take the dough out of the refrigerator (it was proofed for about 20 minutes). We cut off a small part from it. Roll out the dough with a tourniquet and cut into pieces. Dip them in flour on each side.
Step 9 - Next, roll these pieces of dough into thin cakes. We spread a tablespoon of the filling on each. Manty have different shapes, I will show, probably, the most common.
Step 10 - First, pinch the opposite ends of the cake, then sculpt the ends with two corners to the middle.
Step 11 - Next, shape it as in the photo.
Step 12 - Lubricate the circle of a mantool or double boiler with vegetable oil. We spread semi-finished products on it.
Step 13 - Place the circles filled with raw manti in a pot of boiling water. We cook them for a couple of 30-45 minutes. Cooking time will depend on the size of the semi-finished products and the thickness of the dough to be rolled. I grease the finished manti with butter.
We serve the dish to the table immediately, while still hot.
Any sauce you like is suitable for mantas with pumpkin and meat: sour cream with garlic, ketchup, mayonnaise or just butter.
