For any side dish and / or salad of fresh vegetables with herbs, cook beef fried over an overhead fire with onions. We maintain a high temperature, do not stand on ceremony and act promptly.
Ingredients:
Beef - 400 g
Onions - 1 pc.
Vegetable oil - 30 ml
Salt, black pepper - to taste
Greens - for serving
Step by step recipe:
Step 1 - For homemade pan-fried beef and onions, take the foods listed. It is better to use fresh meat, but if you have stocks of frozen meat, thaw it first - transfer it from the freezer to the shelf of the main refrigerator compartment in advance. With a gentle / slow thawing mode, the meat fibers will retain their structure and taste. For frying, choose refined sunflower or corn oil. In addition to salt and hot pepper, if desired, beef can be additionally seasoned (with garlic, herbs and spices).
Step 2 - Cut the clean beef pulp into pieces of approximately the same size. In this case, the heat treatment will take place evenly. Divide the peeled large onion in half, then chop each half into thin half rings. In this dish, the onion is tastier not crushed into cubes, but left tangible.
Step 3 - Thoroughly heat the skillet with a high side, pour in the vegetable oil and after about 20 seconds, spread the cold cuts. When sizzling, keep the meat in oil, but without onions for now. First, moisture will be released, let it evaporate completely. Shake, holding the pan by the handle, or stir with a spatula. After that, fry for a couple of minutes until light crust.
Step 4 - Add chopped onion to the browned meat pieces. Sprinkle with hot pepper and salt, which will enhance not only the taste, but also the caramelization.
Step 5 - Stir again, continue frying until the onions soften and golden brown, the beef shell is more saturated - 5-7 minutes is enough. If you prefer the stewed version, pour in 100 ml of boiling water and simmer under the lid until the desired texture (20-30 minutes).
Step 6 - Don't overdry. Remove roast beef immediately from heat. Taste and season with spices if necessary.
We serve fried beef with onions, for example, along with boiled rice and pickles, fresh herbs.
