If you want to slightly diversify the taste of familiar kefir pancakes, add some berries or fruits to them, for example, aromatic apples are perfect. This recipe involves adding apples directly to the dough itself. Due to their juiciness, apple fruits will make it a little less often than the required consistency, so more flour is added to the mixture than is usually needed. Apple pancakes turn out to be lush, very aromatic, they have a slight sourness, which is characteristic of these fruits.
Ingredients:
Apples - 200 gr.
Kefir 2.5% - 250 ml.
Water - 40 ml.
Egg - 1 pc.
Wheat flour - 300 gr.
Sugar - 3 tablespoons
Salt - 0.5 tsp
Soda - 0.5 tsp.
Vegetable oil for frying - 150 ml.
How to cook:
Prepare the food you need.
Drive one egg into a deep container, add the amount of sugar, a pinch of salt. The amount of granulated sugar can be increased, depending on the acidity of the apples and personal taste preferences.
Whisk these ingredients vigorously with a hand whisk. After beating, some of the sugar should dissolve.
Heat the kefir until warm. Be sure to keep it from boiling while heating. Ideal pancakes are made from a warm fermented milk product (not hot or cold). Combine kefir with water, pour into the main composition, mix again.
Pass the wheat flour through a special sieve before cooking. This manipulation will completely rid it of foreign impurities, and also make the final baking more airy and soft.
After sifting, add flour in small portions to the liquid mixture until all the product is added.
As a result, you will get a rather thick dough that will contain lumps. You can easily get rid of them with a hand blender.
At the same time, add the amount of baking soda to the dough. There is no need to extinguish it with vinegar or lemon juice, since the dough is prepared on a fermented milk product.
Set the dough aside for a while, prepare the apples in parallel. Rinse the fruits, peel off the skin completely, remove the inner part with seeds and veins.
Grate the pulp on a grater with large holes, throw the apple chips into the dough. If desired, the fruit can be cut into small cubes rather than grated.
After loading the apples into the dough, immediately start frying so that they do not have time to release a lot of juice. Place a frying pan on the burner, pour in oil, heat it up. There should be enough oil during frying, otherwise the pancakes will not rise well and burn.
Spoon a small amount of dough into the butter pan, cover with a lid. Literally after half a minute, turn the workpiece over to the other side, remove the lid. Fry all the other tortillas in this way.
Fritters with apples on kefir are ready. Can be served.
