A hearty, delicious second dish for family lunches and dinners - rice with beef in a pan. It is easier to cook pilaf, one might say, hastily, without shamanism, mandatory spices and strict rules. If necessary, replace the beef pulp with pork, lamb, chicken or other poultry.
Ingredients:
Boneless beef - 300 g
White rice - 250 g
Onions - 1 pc.
Carrots - 1 pc.
Garlic - 2 teeth
Vegetable oil - 40 ml
Water - 300 ml
Green peas - 30 g
Salt, hot pepper - to taste
Greens - for serving
Step by step recipe:
Step 1 - To cook rice with beef, vegetables and green peas in a frying pan (or cauldron) at home, take the foods on the list. The best result is with beef or lamb, they have natural firmness and a bright aroma. For frying, choose any refined lean oil. If the meat is frozen, first transfer it from the freezer to the refrigerator shelf and thaw gently (slowly).
Step 2 - We warm up a spacious frying pan with a high side (a stewpan with a thick bottom or a cauldron / iron pot), pour in vegetable oil and after half a minute load the meat cut into pieces. At first, we observe the release of liquid, sometimes we interfere and let the moisture evaporate completely, and the beef is slightly browned.
Step 3 - Add onions to the already steamed and slightly fried meat, after a minute - garlic and carrots. Chop vegetables coarsely or finely, whichever you prefer. Mix again and continue frying for another three minutes. For more caramelization, add a pinch of salt. By the way, instead of carrots, pumpkin is suitable, it is more tender and soft.
Step 4 - Put the rice on the beef with vegetables, turn it over with a spatula and saturate each grain with fat for a couple of minutes.
Step 5 - Fill with water (or broth), salt, pepper and bring to an active boil. I advise you to immediately pour in boiling water, re-boiling will occur sooner. We reduce the heat, under the lid and with constant bubbling, keep the dish until fully cooked (20-25 minutes). Sometimes we remove a sample, when the rice is hard, add an additional portion of boiling water.
Step 6 - Remove from stove and scatter sweet green peas for freshness and color in a plate.
Decorate rice with beef and vegetables with greens and serve hot.
