Vinaigrette with fresh cucumber

In today's famous lean salad, we include an optional fresh cucumber. Against the background of boiled root vegetables, a juicy cucumber smelling of spring comes in handy: it successfully complements pickles, sharp onions and a tonic dressing with lemon juice or wine vinegar. Long live freshness all year round!

Ingredients:

Potatoes - 4 pcs.

Beets - 2 pcs.

Carrots - 1 pc.

Onions - 1 pc.

Fresh cucumber (large) - 1 pc.

Pickled cucumbers - 3 pcs.

Lemon juice - 30 ml

Vegetable oil - 30 ml

Salt, black pepper - to taste

Fresh herbs - for serving

To make homemade vinaigrette with fresh cucumber, take the ingredients listed. Carrots, beets and potatoes, without peeling, only washing thoroughly, bake in advance in foil / refractory form under a lid or boil in boiling water over an overhead fire (about an hour), then cooking, slicing and dressing the salad will take away a minimum time. Serve immediately.

To enhance the wine note, acidity, you can add a small heap sauerkraut. This cabbage is also replaced with pickled or

salted cucumbers - in any case, the vinaigrette wins significantly with pickles, do not exclude them completely.

We clean all boiled or baked and cooled root crops: potatoes, beets, carrots. The sweeter the beets got, the tastier the vinaigrette itself. If it comes across watery / tasteless, add some granulated sugar when seasoning.

The order in which you cut the vegetables does not matter, proceed as you see fit. Try to stick to one "caliber". So, first chop potato tubers and beets into small cubes, put them in a spacious working bowl.

Similarly, chop the onion, boiled carrots. If you do not like the taste of such carrots, additionally slice to a finer size - the carrot slices will not dominate or be particularly felt.

Remove the tough, especially bitter peel of a fresh cucumber so as not to spoil the whole dish. Cut the remaining pulp like potatoes-beets-onions. Grind strong pickled cucumbers in the same manner. We mix the whole assortment for the first time.

Salt, pepper, pour in lemon juice or white wine vinegar, sunflower or corn (or unrefined) oil. Mix all the layers from bottom to top again. Let's try.

Serve vinaigrette with fresh cucumber, adding a branch of young greens.
