Oven cottage cheese casserole with raisins

For a really tasty casserole, choose high-fat cottage cheese, even better rustic, with a characteristic creamy note, buttery and full of moisture. In addition to raisins, any dried fruits, candied fruits, as well as nuts and vanilla are added. Serve both warm, just from the oven, or chilled, aged in the refrigerator, such casserole is stabilized and cut into even edges like a newfangled cheesecake.

Ingredients:

Curd 9% - 400 g

Raisins - 2 tbsp. l.

Sugar - 2 tbsp. l.

Flour - 2 tbsp. l.

Eggs - 2 pcs.

To cook a fluffy raisin casserole in the oven yourself, take the foods on the list. Mold diameter - 20 cm. The larger the container, the lower the product. You can also increase the number of products.

If you want to get a charred, dark crust on the bottom and on the side, grease the inside of the container with butter and sprinkle with ground breadcrumbs of white breads.

It is clear that all the ingredients can be easily mixed and not fiddled with the sequence of bookmarks, whipping, separating the yolks and whites - it will come out delicious. But for those scrupulous cooks for whom the structure of the dough and the tenderness of the curd casserole are also important, I advise you to devote a little more time to the dish. This is not difficult.

First, combine fatty cottage cheese, granulated sugar and two egg yolks (pour the whites into another container). Grind with a submersible blender with a "knife" attachment to a silky consistency and uniformity.

We put a portion of pure raisins and / or pieces of dried apricots, prunes, dried berries, crushed nuts. We stir in a circle, drown additives.

Pour in wheat flour next. A little, just two spoons. This is quite enough for the dough to set, but the expressive curd aroma remains. We knead a denser mass.

In parallel, beat the egg whites until fluffy.

In two or three doses, add the protein substance to the casserole dough. Mix each time until the foam is completely absorbed.

We shift the curd mass with raisins into a refractory form, install the lid and send it to the preheated oven. We bake for about 45 minutes at 180 degrees.

The casserole rises on top, then settles. This is as it should be if there is little flour in it.

Cut the curd casserole with raisins in portioned triangles and serve with sour cream / honey /jam for breakfasts, afternoon snacks and tea drinking.
