Peking cabbage salad with cucumber

In Chinese cuisine, there really is such a salad, of course, it has a different name and we will never know all the correct ingredients that make up it. But today we will prepare a worthy version of it, which I once saw in one culinary show.

Ingredients:

Peking cabbage - 200 g

Carrots - 100 g

Cucumber - 150 g

Garlic - 1 clove

Ginger - 10 g

Soy sauce - 2 tablespoons

Rice vinegar - 1 tablespoon

Hot sauce - 0.5 tsp

Sesame oil - 1 tablespoon

Sea salt - optional

Preparation:

Prepare foods for making Peking cabbage salad with cucumber. Peel the carrots, garlic and ginger. Disassemble the cabbage into leaves. Wash all vegetables separately and pat dry with paper towels.

Chop the cabbage into strips of any thickness. Place it in a deep bowl for stirring the salad.

Carrots need to be chopped into thin strips, it is easier to grate on a special grater. Fold the shavings over the cabbage.

Cut the cucumber into a thin block; if the seeds are large or the vegetable is watery, remove the seeds.

Cut a small piece of ginger (about a centimeter), peel it, try to cut off the fibrous part. Chop the ginger and a clove of garlic in any convenient way. It's easier for me to do this with the finest grater. Place all ingredients in a bowl.

Now prepare the dressing. In a deep bowl, combine the soy sauce, rice vinegar and sesame oil. If the latter is not there, replace it with olive, it will also be delicious with it. If there is a fresh hot pepper, it will generally be great with it, and if not, then add hot sauce to your liking.

Mix everything until smooth. Since I am using reduced salt soy sauce, I will add a little more salt to the finished dressing.

Pour the dressing over the vegetables, mix gently, leave for literally 5 minutes.

Divide the prepared salad of Chinese cabbage, cucumbers and carrots into portions and serve as a cold snack or as an addition to meat dishes. Simple, savory and delicious!
