Classic vinaigrette with peas

Hello honest people. Today another classic of the genre is on the agenda - a popular salad from childhood, which has a large number of variations and modifications in its history. What is not added to it. In some variations of the vinaigrette, put meat (fried or boiled veal, beef) or finely chopped herring. Sometimes it contains a boiled egg. And in some families, it is customary to season this dish with a mixture of vinegar, oil, salt and pepper. Today I will talk about a simple, classic version of the vinaigrette with peas, which is prepared in our home. It contains only vegetables and vegetable oil. Plus, it is lean, which for many will be important.

Ingredients:

Potatoes - 5 pcs.

Carrots - 2pcs large

Beets - 2 pieces of medium size

Pickled cucumbers - 4pcs

Canned peas - 200g

Vegetable oil - 4 tablespoons

Salt - 1 tsp

How to cook:

Prepare food. Wash potatoes, carrots and beets.

Place the unpeeled, washed root vegetables in a large saucepan and cover with cold water so that they cover a couple of fingers. Season with salt and bring to a boil. Cook over medium heat.

Remove the potatoes after 20 minutes. After another 15 minutes, get the carrots. And after 25 minutes, take out the beets. If the water boils away during the process, you can add boiling water.

Now let all vegetables cool well.

Cut the cucumbers into cubes.

Do the same with carrots.

Pour vegetable oil into the beets, mix. Leave separately from all vegetables so that she does not color them ahead of time.

Mix all vegetables except beets together.

This is what the basic vinaigrette looks like at home. It is prepared periodically and the ingredients hardly change. Sometimes I put onions, beans for my mood.

It is very nice to season such a salad with delicious fried sunflower oil with the smell of seeds. The dish has special notes. Sometimes for myself I add a little wine or apple cider vinegar separately.
