According to the press service of the department, in the Moscow region in almost 90% of stores there were some problems. According to the data obtained, more than 70% of the total volume of the tested minced meat turned out to be falsified.
Basically, natural minced meat was diluted with cheaper types, water, flour, starch and other not the most useful additives were added to it. As a result, the finished product became far from safe for consumption.
Many people think that it is enough to refuse to buy ready-made minced meat in chain stores, because it can be purchased from farmers. But here, too, there are no less problems. The fact is that it is even more dangerous, since farm products are rarely checked, which means there is a great chance to buy a pig in a poke.

According to GOSTs, ready-made minced meat sold in stores must contain at least 60% of muscle tissue. The product itself should be free of bones, tendons, connective tissue, films.
But there are several points that you should pay attention to while doing this.

The color of the finished product can be either pinkish red or dark red. The main thing is that it is homogeneous. If you notice darkened or green areas on the meat, such a product should not be taken. Similar signs indicate the appearance of rot, oxidative processes.
Doctor of technical sciences Anastasia Semenova also says that fresh minced meat should have an even color. And the more natural beef in the product, the brighter the color of the product, if there is more pork or chicken, the color will be paler. By the way, the fat contained in the minced meat also affects the color of the final product - it will be lighter.
Experts also emphasize that any changes in color usually indicate non-compliance with storage rules, usually this is caused by non-compliance with the temperature regime. This may indicate either the appearance of putrefactive processes, or the growth of lactic acid microorganisms. Naturally, you should not cook dishes from such minced meat, because many of the bacteria and fungi are not killed by heat treatment - poisoning is quite likely.

You can buy ready-made minced meat only if the buyer is sure of the production date and shelf life of this product. If the seller has not indicated this, we advise you to refuse the purchase.
Not everyone knows that sellers must draw up a declaration of conformity for any meat product. Moreover, you have the right to demand it, even if you buy a product by weight (in large shopping centers and chain stores, such documents are usually stored somewhere in the window).
And it is very important to remember that such a declaration must indicate:
- product name and category;
- composition (additives must be indicated);
- nutritional value and calorie content of minced meat;
- date of manufacture, packaging (if we are talking about a product in a vacuum), expiration date.
If you do not first evaluate the appearance and get minced meat that is not fresh, you cannot cook with it.
Also, if you see that the shelf life of minced meat, especially frozen, is coming to an end, it is better not to take it. During the remaining storage time, unwanted microorganisms can grow in it, which also remain dangerous for cooking, especially if you plan to use it for burgers, cutlets or other dishes fried over high heat only with two sides.
