As you know, minced meat cannot be turned back and meat cannot be restored from cutlets. But meat in this form makes it possible to cook dozens of new dishes. What is important to know about this product from a gustatory and nutritional point of view? Is it worth buying ready-made minced meat and how to choose the right one in stores? Let's find out more.

What is the danger of buying ready-made minced meat?

Several shopping centers in Russia were involved in a bad-smelling story in the truest sense of the word. According to the inspection data Rosselkhoznadzor, who checked, the minced meat found in the sale in Moscow, Tula and Lipetsk regions turned out to be far from the best quality: the beef was not quite beef, the pork was far from pork.

It was not fresh, expired, and even contaminated with bacteria. And the sellers simply re-glued the labels.

According to the press service of the department, in the Moscow region in almost 90% of stores there were some problems. According to the data obtained, more than 70% of the total volume of the tested minced meat turned out to be falsified.

Basically, natural minced meat was diluted with cheaper types, water, flour, starch and other not the most useful additives were added to it. As a result, the finished product became far from safe for consumption.

Many people think that it is enough to refuse to buy ready-made minced meat in chain stores, because it can be purchased from farmers. But here, too, there are no less problems. The fact is that it is even more dangerous, since farm products are rarely checked, which means there is a great chance to buy a pig in a poke.

Educational program on minced meat: how did it appear and is it not dangerous to health?

Why were people initially not satisfied with meat in pieces? The fact is that minced meat is better from the point of view of our health than meat in pieces. Its main advantage is that cutlets or minced meatballs are digested faster and better. As the nutritionist notes Tatiana Zaletova, if you are not used to chewing every piece of food at least 20 times (this is how much the doctors advise), then it is better to choose minced meat.

In this form, the protein contained in meat breaks down faster into smaller components, which means that all useful elements will be absorbed better.

True, there is an important nuance associated with the peculiarities of the work of our body. So, if you are used to always eating minced meat, and then eat a piece of fried meat, then your digestive system will have a hard time.

Roskachestvo: tips for choosing minced meat

According to GOSTs, ready-made minced meat sold in stores must contain at least 60% of muscle tissue. The product itself should be free of bones, tendons, connective tissue, films.

But there are several points that you should pay attention to while doing this.

Colour

The color of the finished product can be either pinkish red or dark red. The main thing is that it is homogeneous. If you notice darkened or green areas on the meat, such a product should not be taken. Similar signs indicate the appearance of rot, oxidative processes.

Doctor of technical sciences Anastasia Semenova also says that fresh minced meat should have an even color. And the more natural beef in the product, the brighter the color of the product, if there is more pork or chicken, the color will be paler. By the way, the fat contained in the minced meat also affects the color of the final product - it will be lighter.

Experts also emphasize that any changes in color usually indicate non-compliance with storage rules, usually this is caused by non-compliance with the temperature regime. This may indicate either the appearance of putrefactive processes, or the growth of lactic acid microorganisms. Naturally, you should not cook dishes from such minced meat, because many of the bacteria and fungi are not killed by heat treatment - poisoning is quite likely.

Date and Time Match

You can buy ready-made minced meat only if the buyer is sure of the production date and shelf life of this product. If the seller has not indicated this, we advise you to refuse the purchase.

Not everyone knows that sellers must draw up a declaration of conformity for any meat product. Moreover, you have the right to demand it, even if you buy a product by weight (in large shopping centers and chain stores, such documents are usually stored somewhere in the window).

And it is very important to remember that such a declaration must indicate:

  • product name and category;
  • composition (additives must be indicated);
  • nutritional value and calorie content of minced meat;
  • date of manufacture, packaging (if we are talking about a product in a vacuum), expiration date.
If you do not first evaluate the appearance and get minced meat that is not fresh, you cannot cook with it.

Also, if you see that the shelf life of minced meat, especially frozen, is coming to an end, it is better not to take it. During the remaining storage time, unwanted microorganisms can grow in it, which also remain dangerous for cooking, especially if you plan to use it for burgers, cutlets or other dishes fried over high heat only with two sides.
