Delicious and ruddy pancakes in milk without yeast are an ideal dish for breakfast, afternoon tea or dinner. They can be prepared both sweet and salty with any filling. The recipe for pancakes is so simple that even a novice cook can handle it, the main thing is to give the dough to “rest” at least 20 minutes so that the gluten in the flour will activate. If you break this rule, you will get products torn when turning over. By the way, you only need to turn pancakes when their edges are browned.
Buy any milk, from farm milk to store pasteurized with any fat content. Neither baking soda nor baking powder is added to the dough, as they will begin to increase the pancakes in size, and according to the recipe they should turn out thin.
Ingredients:
Milk - 1 tbsp.
Wheat flour - 5 tbsp.
Chicken egg - 2 pcs.
Sugar - 2 tablespoons
Salt - 2 pinches
Vegetable oil - 2.5 tablespoons
How to cook:
Prepare the food you need.
Drive chicken eggs into a deep container, rinsing them in water and drying them with paper towels. Add granulated sugar and salt there.
If you plan to create salty pancakes, you can add a couple of pinches of dried Provencal herbs, other seasonings or spices, replacing them with sugar. If desired, for sweet products, add a couple of pinches of ground cinnamon along with granulated sugar, pour in a few drops of flavoring: citrus, vanilla, etc.
Beat everything with a whisk or mixer for 2 minutes.
Pour in milk of any fat content and vegetable oil. Whisk everything again.
Sift the wheat flour and add it to the container, beat with a whisk or mixer so that no lumps form.
Cover the prepared dough with cling film or cotton towel, set aside for 15-20 minutes.
After the specified time, heat the pancake pan on the stove, turning on medium heat. Lubricate it with vegetable oil, since fat is already present in the dough, then this will no longer be necessary. Pour some of the prepared dough into the pan and gently scroll to form a circle, fry for 1 minute.
Turn the pancake over to the other side, gently lifting it by the dried edge and prying a silicone spatula under it. Fry until golden brown and place on a plate. Prepare all the pancakes in this way.
Put thin pancakes on a platter and serve with honey, jam, jam, berries or sour cream, not forgetting about a cup of hot drink: latte, cappuccino, coffee or tea.
