Feel free to experiment with the filling: cottage cheese with berries, fruits with poppy seeds and raisins in sweet versions; canned fish with eggs and rice, mushrooms and onions, stewed cabbage, meat and chicken - in the snack bars.

Ingredients:

Pancakes - 12 pcs.

Champignons - 400 g

Onions - 2 pcs.

Vegetable oil - 40 ml

Sour cream - 40 g

Salt, black pepper - to taste

To make a pancake pie with mushrooms or other fillings (including sweet ones), take the foods listed. Thin pancakes bake ahead of time with your favorite, proven recipe. The basis can be both milk and fermented milk drink (whey, sour milk, kefir, yogurt), mineral water. Pancakes should be soft, pliable, and strong.

For a juicy and tasty filling, we take a lot of onions. After cleaning, chop with half rings or feathers and sauté in vegetable oil for three to four minutes. Sprinkle immediately with a pinch of salt, which caramelizes and gilded the onion faster.

Chop pure champignons at random. We will grind fried mushrooms with onions in the future, so the method of slicing is not of fundamental importance. At the same time, large fragments will retain juiciness, aroma, and natural structure. Stir and continue frying for another 10 minutes over moderate heat. We monitor the mixture, do not let it burn.

At the end of frying, season the onion-mushroom mixture with ground black pepper (herbs, garlic - optional). Remove from the stove and cool - enough until warm. We pass through a meat grinder or grind in a grinder.

There are many ways to fold a pancake pie. Today I propose to form it in the form of a roll. We take two empty pancakes as a basis, put a little one on top of the other, distribute the mushroom and onion filling on top.

Again we connect the two pancakes with a small overlap, cover with the filling - we return the first blank-bar to the edge, again twist it tightly. We repeat the steps with the remaining pancakes and mushrooms.

Grease the pancake pie with a layer of sour cream, which will hold the outer shell together and brown the product. We apply sour cream from all sides. We send the semi-finished product on a baking sheet with parchment into a pre-heated oven for 15-20 minutes (at a temperature of 190 degrees).

We cut off the illiquid edges, divide the pancake roll pie itself in portions and serve it to the table with pickles, sauces and fresh herbs.
