A properly cooked Kiev cutlet is a real masterpiece! True, it is not so easy to cook it according to all the rules, it is not for nothing that in Soviet times it was one of the most served dishes in restaurants.
Today I will show not the classic recipe for Kiev cutlets, but already improved and simplified by our hostesses. But, believe me, this option is also very tasty.
Chicken Kiev cutlets can be served both for an ordinary dinner and for a festive feast.
Ingredients:
Minced chicken -600 gr.
Butter -100 gr.
Chicken eggs -2 pcs.
Wheat flour -2 tbsp.
Breadcrumbs - 4 tablespoons
Parsley greens -1 bunch.
Salt to taste
Ground black pepper - to taste
Vegetable oil -100 ml
How to cook:
Prepare all ingredients as listed. The butter should be very soft. It is better to cook minced meat at home from chicken breasts by passing them through a meat grinder or chopping them in a blender. Breadcrumbs can be made from yesterday's, not very fresh, white bread: break it into pieces and grind in a blender. Then you will be sure of the quality of the products used.
Finely chop the parsley. You can replace it with dill, and if you wish, add a couple of cloves of garlic, rosemary (if you like, it will be very aromatic with it).
Add chopped herbs to soft butter, salt and pepper, mix.
Cut a piece of cling film, put fragrant butter with herbs in the middle.
Roll up with a "sausage", tighten the edges of the film and twist it like a candy wrapper. Put the prepared oil in the freezer for 10-15 minutes. It should be slightly frozen so that you can easily cut it with a knife later.
Add salt and pepper to the minced chicken. Mix thoroughly.
Prepare 3 bowls for the patties. Pour flour into one, breadcrumbs into the other, eggs in the third, stir them with a fork and salt. Remove the butter from the freezer and cut into thin rings.
Form the minced chicken into 6 tortillas. Place 1 ring of oil on each in the center.
Shape the patties: join the edges of the cake so that the butter is completely sealed in the minced meat. It will be more convenient to do this if your hands are slightly moistened with water.
Zip the prepared semi-finished products: first roll in flour, then in an egg, then in breadcrumbs, again in an egg and breadcrumbs. Shape the cutlets with your hands.
Fry the blanks over medium heat in vegetable oil until golden brown.
Transfer the fried patties to a baking dish and cook in the oven at 200 degrees. In time, this takes about 10-15 minutes.
Serve hot minced Kiev cutlets with any garnish.
