I propose to cook an appetizing dish - beef in a sweet and sour sauce, but not in an Asian, but in a European style: with a long, many hours of simmering in a rich and fragrant gravy. In my example, meat is stewed with vegetables and homemade pickled cherries from winter preparations. The composition of the cherry marinade includes cinnamon, star anise, cardamom, spicy and wine additives. But you can replace it with dry red wine, fresh or frozen cherries and spices.

Ingredients:

Beef - 600 g

Carrots - 1 pc.

Onions - 1 pc.

Garlic - 1 pc.

Champignons - 100 g

Soy sauce - 30 ml

Honey - 30 ml

Vegetable oil - 30 ml

Pickled cherries - 300 g

Salt, hot pepper - to taste

Greens - for serving

Step by step recipe:

To braise beef in sweet and sour sauce, take the foods listed. If necessary, defrost the meat beforehand. However, with prolonged heat treatment in a liquid medium, any piece of pulp will turn into melting and tender. The recipe also works for lamb and pork.

Cut clean and dry meat into long pieces, bars or cubes, not finely. After removing the husk, cut the onion into two or three parts and, without oil and other fat, charcoal until black in a hot frying pan. Thus, we get a smoky smell that will make our beef even tastier.

In a cauldron or some heat-resistant container with thick walls, we heat up lean refined oil. We lower the cold cuts and, sometimes stirring, fry on high heat for 3-4 minutes until golden brown.

Throw in pieces of carrots (also large), a charred onion, a head of garlic cut in half (don't even peel it).

Fill with cherry marinade, soy sauce, if desired, season with additional spices. Bring to an active boil. The liquid should completely cover the beef and vegetables. Reduce the temperature and simmer under the lid on an overhead fire (or in the oven, oven) for the next 2-3 or even 4 hours (depending on the hardness of the meat and your personal preferences).

For the last 5-10 minutes, simmer together with cherries, mushrooms and honey (often replaced with sugar, including cane sugar). We try, adjust for salt / pepper. Remove the beef in sweet and sour sauce from the stove and let it brew for another 10 minutes.

Before serving, decorate the beef stew, rich in color and taste, with herbs. The dish goes well with any garnish.
