Already by the name of the recipe, you can guess that the pancake dough is kneaded with kefir and oatmeal is put in it. I prefer not to add finished oat flour to the dough, but to grind oatmeal in a coffee grinder. Because sometimes it tastes bitter, but the flakes on which we cook porridge have already been tested.
There are not many pancakes from this portion of the dough. They are slightly thicker and dense, so they are very suitable for wrapping various fillings in them.

Ingredients:
Kefir - 200 ml.
Sugar - 1 tablespoon
Salt - 1 pc.
Chicken eggs - 2 pcs.
Oat flakes - ½ st.
Vegetable oil - 3 tbsp.
Step by step recipe:
Prepare according to the list the products you need to make oatmeal pancakes with kefir. Remove eggs and fermented milk product (I used 3.2% fat) from the refrigerator in advance.
Break chicken eggs into a bowl, add sugar, a pinch of salt. Whisk everything lightly to dissolve the sugar grains. If you plan on a savory filling, reduce the amount of sugar to 1/2 tsp.
Pour in kefir.
Grind the oatmeal in a coffee grinder and put it in a bowl. Stir.
Pour in vegetable oil, you can add butter, just before that, heat it up in the microwave and cool. Then pour in some boiled water. The dough should be thick and flowing. Experienced housewives can easily determine this by eye, I needed about ¼ glass of water.
Leave the dough in the bowl to “rest” for 20 minutes. When it's ready to roast, the oatmeal grains will be clearly visible on the surface.
Grease a pan for baking pancakes with vegetable oil, heat over high heat, then reduce heat to medium. Pour the dough with a ladle, turn quickly so that it spreads evenly.
Keep on stove until golden brown, then flip the pancake over quickly. Bake a couple more minutes on the other side.
Put the finished pancakes on a plate in a stack. Lubricate them with butter immediately if desired.
Our kefir oat pancakes are ready. Serve with various fillings or simply with sour cream, condensed milk, honey.
