A proven recipe for a lean dish - delicious dumplings with potatoes and fried onions. Wasting no time, boil potatoes, fry the onion slices and knead the choux pastry in boiling water. If you decide to replenish stocks for future use, freeze semi-finished dumplings.

Ingredients:

Dough:

Flour - about 200 g

Vegetable oil - 30 ml

Water - 100 ml

Salt - a pinch

Filling:

Jacket potatoes - 3 pcs.

Onions - 1 pc.

Vegetable oil - 30 ml

Salt, hot pepper - to taste

To make lean dumplings with potatoes, take the products from the list. Boil potato tubers in their skins beforehand. Mashed potatoes will receive the desired density, plasticity, rich aroma and will not turn out to be watery (if you boil peeled potatoes).

Choose refined corn or sunflower oil for dough and filling. Add mushrooms if desired.

Mix the wheat flour with a pinch of salt. Pour in vegetable oil, boiling water and first stir with a spatula or spoon, protecting your hands from burns. I must say that the flour mixture cools quickly and becomes warm after a couple of minutes.

Then knead by hand, make the dough for dumplings homogeneous, smooth and elastic. If necessary, add more flour.

For the filling, in the same vegetable oil, pass the chopped onion until golden transparency - 3-4 minutes are enough at moderate heat.

Mashed potatoes cooked in their skins. Season with salt and hot pepper. Mix with fried onions. We leave part of the onion sauté for serving.

Divide the dough into small pieces, each roll out with a round and thin cake. Distribute mashed potatoes with onions in the center of the flour layers.

We form blanks with tightly connected joints. Boil or freeze in this form.

Dip the semi-finished dumplings into salted boiling water. After surfacing to the surface, boil for about a minute and catch it with a slotted spoon (or discard it in a colander). Sprinkle with fried onions, fragrant fresh herbs on top.
