Lush, tender, soft pies are perfect for any occasion. You can have a snack, have breakfast, have some tea with your family and indulge in memories of the sweet soul of time. For some reason, childhood memories are the clearest, most vivid, I remember everything down to the smallest detail. Every movement of the grandmother, her hands, even the smell from the oven, where pies with various fillings are baked.

Granny cooked a lot of dough, and her pies were large, from the palm of her hand. "The mouth rejoices at a large piece!" she loved to repeat.

Please, too, your loved ones with baked pies made from yeast dough on kefir. The recipe is pretty simple. The number of products is small, designed for 14-16 pieces. If desired, the rate can be increased. You can use any filling of your choice. For my pies, I prepared a filling of fried cabbage and mushrooms.

Ingredients:

For the test:

Kefir - 200 ml.

Vegetable oil - 60 ml.

Flour - 2 cups
Dry yeast - 7 grams
Sugar - 1 tablespoon

Salt - 1 pinch

Additionally:

Egg yolk -1 pc.

Milk - 1 tbsp.

Vegetable oil - 1 tsp

Prepare food for making yeast dough. Kefir can be used 2.5-3.2% fat. Sift the flour through a sieve.

Pour kefir into the container. Heat it to a temperature of 36-37 degrees, comfortable for activating the yeast.

Pour in vegetable oil, add sugar and yeast. Stir with a whisk until they are completely dissolved.

Leave the dough in a warm place. As soon as the yeast is activated, a foam will appear on the surface.

Pour wheat flour into the yeast base and knead the dough.

Kneading can be done manually or using a kitchen machine. Put the finished dough in a container, cover with cling film and leave for an hour to rise.

Divide the finished dough into pieces, each weighing about 40-45 grams. Roll up the balls, put them on the surface, cover with plastic wrap or a kitchen towel and let them “rest” for 10 minutes.

Roll each ball of dough with a rolling pin into a cake. Put 1 tablespoon in the middle. fillings and form a patty. Choose the shape of the products at your discretion, as well as the filling.

Put ready-made semi-finished products on a baking sheet lined with parchment paper greased with vegetable oil. Leave them to separate for 30 minutes, then brush with a mixture of egg yolk and milk using a cooking brush.

Bake the pies in an oven preheated to 180 degrees, until a delicious ruddy. Fold the baked goods into a suitable container and cover with a kitchen napkin.
