The basic, perhaps the most popular preservation in the home, is from cucumbers or tomatoes. This time we will combine both vegetables in one assortment. This option is convenient both for a daily diet and for a festive table. Each eater is free to choose for himself what he likes or in what sequence to taste.

Ingredients:
Tomatoes - 250 g
Cucumbers - 250 g
Garlic - 20 g
Vinegar 9% - 1 tbsp l.
Water - 250 ml
Bay leaf - 1 pc.
Allspice - 3 pcs.
Ketchup - 2 tbsp l.
Salt - 0.5 tsp l.
Sugar - 1 tsp l.
Hot pepper - to taste
Step by step recipe:
For the preparation of a platter of cucumbers and tomatoes for the winter, take the necessary food.
Feel free to change the list of "flavors", expand or reduce to a minimum according to your own taste. Try hot marinade. It should be concentrated, wine-sharp - a saturated liquid is needed to soak vegetables.
Decide for yourself the proportions of cucumbers and tomatoes in one jar: you can equally, you can differently.
When pickling (with vinegar), horseradish, cherry, currant leaves, traditional for sourdough, dill in umbrellas can be omitted. Flavor with any herbs, spices and seasonings.
My vegetables, we select ripe, without rot and other flaws. We pierce the tomatoes with a toothpick in the place where the stalk grows, it is easier to keep the skin intact.
Cut off the "butts" of the cucumbers. If you get large ones, cut them. There will be more of them in the bank.
Put cucumbers and garlic into a sterile container. Load the hard vegetables first.
Then add the tomatoes. Do not ram, otherwise the skin will burst.
Fill with boiling water, put on a lid (do not twist) and steam for 10 minutes. Thus, we measure the required volume of water for the marinade and sterilize the assortment.
After the specified time, carefully, so as not to burn your hands, drain the water. Add ketchup, sugar, salt, bay leaves, peppercorns or other aromatic spices. Boil, remove from heat and mix with vinegar.
Re-pour the cucumber and tomato platter with hot marinade. We close it tightly.
We turn the lid down, leave it for 5-10 minutes, see if there is a leak. Then we wrap the blanks with woolen or other suitable fabric, let them cool completely.
We store the seaming in the pantry.
