Ayran is a very popular drink in many eastern countries. Today, thanks to its magical qualities, it has earned its popularity almost all over the world. It perfectly refreshes the body, gives vigor and strength, quenches thirst and hunger. Due to the high amount of protein and fat, ayran is very nutritious. Also, the presence of mineral salts and carbohydrates makes it a super healthy drink. It is recommended to use it on fasting days, during various diets, or just on a normal weekday to maintain health. Ayran strengthens the immune system, improves the functioning of the gastrointestinal tract.
The drink can be purchased at the store without any problems, but it will be much more useful to prepare it yourself. For its production, a certain leaven is used - katyk. But, since it does not exist in our country, ayran can be prepared at home using any fermented milk product.
It is permissible to prepare such a drink according to different recipes, today we will consider one of them. We take kefir as a basis, dilute it with carbonated water, and use pickled cucumber, herbs and salt as additives. This, of course, is not a classic ayran, but the difference in taste is almost imperceptible. To make the drink tender and fluffy, the ingredients are whipped with a blender. Density and salinity can be adjusted independently. All products must be chilled.

Ingredients:
Kefir - 250 ml.
Carbonated mineral water - 250 ml.
Greens - 20 gr.
Salt - 0.25 tsp
Pickled cucumber - 1 pc.
Crushed ice - 20 gr.
How to cook:
Prepare food.
Chop the pickled cucumber with a coarse grater or chop finely with a knife. If the skin is dense, then it is better to cut it off in advance.
Rinse greens under running water, dry slightly on a cloth towel. Cut off thick stems, finely chop the leaves.
Pour chilled kefir into a blender bowl, add cucumbers and herbs to it. Be sure to add a little salt to the composition.
Ideally, it is better to take homemade kefir, it is more useful, but a store product will also work.
With the machine turned on at full power, beat the contents of the bowl, getting the most homogeneous composition. You may need to turn on the blender several times to get a fluffy frothy drink.
Next, combine the resulting composition with chilled mineral water with gas.
Ayran is ready! Pour it into a suitable container (preferably chilled), add crushed ice, garnish with fresh herbs.
Homemade ayran is consumed immediately after preparation. It should not be stored for a long time in the refrigerator, it quickly loses its taste, sharpness and aroma.
Apart from being a refreshing drink, ayran can be used for other purposes. For example, on its basis, cook pancakes and pancakes, soak meat in it, create cold soups.
