Creamy white bean soup

For cooking you will need:

  • 0.5 kg of white beans:
  • 0.1 kg of onions:
  • 50 ml olive oil;
  • 0.5 l of water;
  • herbs and spices to taste.

It will not be difficult to prepare it:

  • It is advisable to soak the beans in advance so that they are soft, then boil for half an hour.
  • Heat oil in a frying pan and fry the chopped onion. It should become soft.
  • Pour the onion over the beans, add all the spices, cook for 5-7 minutes.
  • Whisk the entire contents of the pan to make a puree.
  • Bring it to a boil, pour it into deep containers, garnish with a sprig of parsley or chop finely chopped dill.

Broccoli cream soup

A very healthy soup, especially for those on a diet or healthy diet.

Cooking components:

  • 1 liter of vegetable broth;
  • 0.5 kg of broccoli (it is better to take a fresh product);
  • 0.8 kg of red fish fillet;
  • 1 small carrot;
  • 1 tbsp. flour, butter;
  • 0.4 l of 10% cream.
To enhance the taste, it is recommended to add cinnamon, nutmeg, paprika and marjoram.

Preparation:

  • While the broth is preparing, you need to do the fish: put the fillet on foil, sprinkle with spices, salt, put in the oven for half an hour, temperature - + 200 ° C.
  • Chop the carrots, boil for 4-5 minutes, add broccoli and cook the same amount.
  • Pour the vegetables into a colander so that the water is glass, then put in a saucepan, cover with broth, chop with a brandy.
  • Melt butter in a frying pan, add flour, mix and fry, pour in cream, stirring occasionally, bring until thickened.
  • When the sauce is ready, pour it over the broccoli and beat again. The soup should be warmed up over low heat, but not boiled.

It is served with trout, sprinkled with herbs for taste.

Mushroom cream soup

Hearty, tasty soup, while reducing its calorie content can be done by using vegetable broth.

Ingredients:

  • 0.5 l of broth;
  • 0.4 kg of champignons;
  • 2 onions;
  • 1 carrot;
  • 1 celery stalk:
  • 2-3 cloves of garlic;
  • thyme to taste;
  • 0.2 l of white wine;
  • 150 ml 10% cream;
  • some olive oil, salt and pepper to taste.

Step by step cooking:

  • You need to peel the onions, cut into thin rings, fry in oil for half an hour, stirring.
  • Cut the garlic into slices, carrots into slices, celery into thin slices. Finely chop the mushrooms.
  • Preheat a saucepan, fry the carrots and celery so that they become soft, add the mushrooms and garlic, simmer for about 5 minutes, stirring constantly.
  • Add wine, thyme and bring to a boil. Cook for another 5 minutes, pour in the broth, onion, continue cooking until the volume is halved.
  • Add salt and pepper.
  • Remove the container from the heat, grind all the ingredients, add the cream and heat the soup. The main thing is that it does not boil.

It is recommended to serve the soup, seasoned with onions and parmesan.

Asparagus cream soup

Few people like asparagus because it does not have a pronounced taste. But this soup will appeal to both adults and children.

Ingredients:

  • 50 ml 35% cream;
  • 50 g butter;
  • 1 potato;
  • 300 g white asparagus;
  • 0.4 l of broth;
  • Leek;
  • Thyme, bay leaf.

Preparation:

  • Peel the asparagus, tie the stems and dip them in slightly salted water for 5-7 minutes, immediately transfer to a container with cold water.
  • Tie the onion, parsley, laurel and thyme leaves with a thread.
  • Peel potatoes and cut into small cubes.
  • Melt the butter in a saucepan, fry the onion for about 3 minutes, put the asparagus there, pour the broth and bring to a boil.
  • Send potatoes, "bouquet" of seasonings, add spices and cook for 40 minutes.
  • Take out the seasonings, chop all other foods and pour into a clean saucepan through a sieve.
  • Add cream, mix and leave on the stove until simmering.
