Oyster mushroom and spinach salad is easy to prepare, yet incredibly tasty. Thanks to the spice marinade and mushroom juice, an original dressing comes out. Due to her, the salad is very juicy, oyster mushrooms have the taste of pickled mushrooms. For colorfulness and freshness, the mix is complemented by tomatoes, it is better to take miniature cherry blossoms.
This salad can be served with main courses or on its own.

Ingredients:
Oyster mushrooms - 350 gr.
Spinach - 250 gr.
Leeks - 80 gr.
Cherry tomatoes - 120 gr.
Olive oil - 4 tablespoons
Garlic - 2 cloves
Dried oregano - 1 tsp
Dried basil - 1 tsp
Grain mustard - 2 tsp
Lime juice - 3 tablespoons
Salt, pepper - to taste
How to cook:
Prepare the food you need.
Wash the oyster mushrooms thoroughly under running water, cut into pieces of any shape. It is not necessary to chop the mushrooms very finely, since during frying they will approximately halve in size; large or medium slices are suitable for a salad.
Place a frying pan on the stove, pour oil inside. Heat over low heat. Cut the cloves of garlic into slices, put in hot oil. Pour dry basil and oregano there, add grain mustard, squeeze lime juice. Mix everything. Fry for no more than a minute.
Add oyster mushrooms to the spicy composition, cover the pan with a lid so that they let the juice out. Spices together with mushroom juice form a marinade, which will serve as a salad dressing. Simmer the mushrooms in liquid over low heat for about 3 minutes, stirring occasionally.
Rinse the spinach. Leave small leaves intact, and large ones - cut or tear with your hands. You do not need to chop the spinach very finely, the leaves should remain lush.
Cut the leeks into strips, add to the spinach.
Put the oyster mushrooms and the marinade in a bowl with the rest of the ingredients. Stir the mixture for a few minutes until the spinach leaves have absorbed some of the marinade.
Cut the cherry into two or four pieces, depending on their size. Add them to a salad bowl.
Put the salad with spinach, oyster mushrooms and cherry tomatoes on a flat dish, sprinkle with sesame seeds. It can be chilled in the refrigerator for 10 minutes before serving.
