Pickled apples are a great snack any time of the year. They go well with any meat dishes, and in winter they are an additional source of fiber and vitamins.
For better preservation of useful properties, we do not blanch the apples, but simply pour boiling water over them. They come out spicy and aromatic due to the addition of mint and cinnamon, a pleasant sweet and sour taste. Especially beautiful marinades are obtained from bright, orange-red fruits, which can be preserved in halves or quarters (large). Small-fruited varieties of apples are pickled whole, removing the seed capsule.
Ingredients:
Apples - 300 g.
Water - 600 ml.
Salt - 10 g.
Sugar - 60 g.
Citric acid - 5 g
Cinnamon - 3 g.
Fresh mint - 3 g
Cloves - 2 pcs.
Step by step recipe:
Take the food you need to make the compote. The apples should be firm and medium in size. The calculation of the products is given for an 800 ml can.
Pre-select strong apples, wash them well under the tap and dry with a kitchen towel, or just let the water drain completely. Then cut them into halves and remove the place of the stalk and the core - this is simply done with a regular teaspoon.
For canning, you will need sterile dishes. Rinse well with water first. The jar must be sterilized in the microwave, oven, or held over boiling water. The lid must be boiled.
Place a sprig of mint on the bottom of the jar.
Place apples in the jar with the cut side down - this will make it tighter.
Pour boiling water over the contents of the container with overflow. Cover with a lid and hold for 5-7 minutes.
Pour the water into a saucepan, and pour cinnamon into a jar, put a clove.
Add salt, sugar and citric acid to the drained hot water. Boil the marinade.
Pour the boiling marinade over the contents of the jar, again overflowing (so place a folded napkin under the bottom).
Close the jar with apples tightly with a lid, turn it upside down, send it “under the fur coat” until it cools completely.
You can store the workpiece indoors.
Pickled apples are good for any meal, they can become a real decoration of your table. The marinade in the proposed recipe is quite gentle, so such a treat will not harm even children.
