Grated cottage cheese pie is our answer to the famous cheesecake.

The name of the baking indicates the method of preparation: before baking, the shortbread dough is not rolled out with a rolling pin, but grated. This will create a crumbly crust and a crispy top crust. And of course, a large amount of delicate curd filling.

Ingredients:

Wheat flour - 420 g

Butter (cold) - 250 g

Sugar - 100 g

Salt - 1 pinch

Chicken egg - 1 pc.

Vanillin - to taste

Filling:

Cottage cheese (fat content 9%) - 500 g

Sour cream (fat content 20%) - 170 g

Sugar - 5 tablespoons (or to taste)

Potato starch - 1 tablespoon (no slide)

Step by step recipe:

Prepare your ingredients. Their number is calculated for a mold with a diameter of 24 cm.

Cut the butter into small cubes and keep in the refrigerator until needed.

Cottage cheese and sour cream can be of any fat content, but the higher the percentage, the tastier the filling will be.

The amount of sugar for the filling depends on the taste of cottage cheese and sour cream: if the foods are too sour, add more.

For shortcrust pastry, combine flour and salt, add cubes of cold butter and rub into crumbs with your fingers.

Beat the egg, sugar and vanillin separately with a fork. Pour this mixture into the butter and flour crumbs and quickly knead the dough.

It is not necessary to knead it for a long time, it is enough to achieve the combination of the components. It will turn out to be oily, well-kept in shape and almost not sticky.

Divide the dough into two unequal parts, wrap it in plastic wrap or a bag and put it in the refrigerator for 1 hour (or in the freezer for 30 minutes).

While the dough is cooling, prepare the filling: rub the curd through a sieve.

Add starch, sour cream and sugar.

Mix everything. Vanillin can be added to taste and filling.

Turn on the oven to preheat to a temperature of 190-200 degrees. Line the mold with baking parchment.

Remove a larger piece of dough from the refrigerator and grate it into a mold.

Using your fingers, spread the crumbs along the bottom, forming high sides, lightly pressing the dough to form an even layer.

Lay out the filling and smooth it out. Then remove the smaller piece of dough from the refrigerator and grate it over the curd.

Spread the crumb over the filling without applying pressure.

Bake the grated cottage cheese pie in the preheated oven for about 30 minutes or until cooked through. The finished product has a ruddy top crust and a soft filling in the center.
