If you like simple and uncomplicated recipes, I hasten to share with you one such version of a salad with corn and tomatoes. The basis is corn. It can be used canned, or you can take it, like me, boiled-frozen, sweet, summer harvest. Among other things, add fried zucchini. The combination of all the ingredients gives a simply gorgeous result, and to make it even better, add quite a bit of garlic. The dressing of our dish is mayonnaise, but if you wish, you can use a mixture of yogurt and mustard.
You can serve the salad yourself, but it will never be superfluous to add potatoes or rice to it, or any meat, poultry.
Ingredients:
- Tomatoes - 1 pc.
- Frozen corn (boiled) - 140 g
- Zucchini - 150 g
- Mayonnaise - 1 tablespoon
- Salt, pepper - to taste
- Garlic - 0.5 tsp
- Vegetable oil - 2 tablespoons
Prepare everything according to the list. Remove the corn from the freezer in advance, allow time to defrost.
Choose a young zucchini. Cut it into small cubes.
Rinse the tomato, dry it, remove the place where the stalk grows. Cut the vegetable into small cubes.
Heat some oil in a frying pan, transfer the zucchini, fry until tender.
Transfer the chopped tomatoes to a plate, add the fried zucchini. Then pour the corn into the salad.
Add a spoonful of mayonnaise, salt, ground pepper and garlic.
Stir all ingredients, remove sample.
Serve the salad right away, as there are tomatoes in it, and they should not drain.
