There is nothing tastier than shortcrust pastry cookies with cottage cheese, especially if they are served with hot aromatic tea or coffee - such a treat is as difficult to refuse as it is to resist! You can make a treat at home in just 40-50 minutes, if you have all the ingredients. When serving, the curd triangles are sprinkled with powdered sugar - this gives them a slight sweetness.
It is advisable to taste the cottage cheese - it may turn out to be sour, and then you will have to pour a little more granulated sugar into the dough in order to level the curd sourness. By the way, if you wish, you can use different flavors: vanilla sugar or extract, citrus, rum, etc. The cookies will acquire an extraordinary taste and aroma!
Ingredients:
Cottage cheese - 100 g
Chicken egg - 1 pc.
Butter - 120 g
Sugar - 60 g
Wheat flour - 2.5 cups
Baking powder - 0.25 tsp
Salt - 2 pinches
Powdered sugar - for dusting
How to cook:
Prepare food.
Melt the butter in the microwave or in a skillet. Transfer it to a salad bowl or deep bowl. Add salt and granulated sugar. Mix gently.
You can use butter margarine or coconut oil instead of butter, but no spread!
Beat a chicken egg into the slightly cooled oily mass and add cottage cheese of any fat content. Do not drive an egg into hot butter, as it will curdle immediately. Gently mash and beat the contents of the container with a fork. At this stage, you can add various flavors to the mixture.
Stir in the sifted wheat flour and baking powder, leaving some flour to roll out the dough. Baking powder is not recommended to be replaced with slaked soda. Knead a plastic shortbread dough.
Knead the bun thoroughly and put it on a plate or saucer, cover with cling film and place in the refrigerator for 20 minutes.
After the specified time, remove the dough from the refrigerator, pinch off half and roll it out on a work surface dusty with flour into a layer no more than 0.5 cm thick. Dip a glass or cup in flour and cut out circles.
Line a baking sheet with parchment paper. Preheat oven to 200 degrees.
Connect the edges of the circles of dough once, then again, to get triangles-quarters. Flatten them slightly.
Transfer the pieces to parchment paper and place the baking sheet in the oven for 15 minutes. Watch the bottom of the baked goods, it should not burn.
Remove the finished Triangles cottage cheese cookies from the oven and let cool slightly.
Place on a plate or dish, sprinkle with powdered sugar and serve. The delicacy is delicious in any form: warm or cold. Don't forget to brew black or green tea, aromatic coffee or latte.
