Cooking pies with meat and rice - delicious, hearty. I usually prefer the snack option - small cakes, for two or three bites. These can be served on a festive table, and for a regular breakfast or snack.
I propose to cook the dough on any fermented milk product, it turns out lighter and more magnificent. Today I took fermented baked milk. When the dough is kneaded, send it to rise while preparing the filling.
Ingredients:
For the test:
- Flour - 300 g
- Ryazhenka - 120 g
- Dry yeast - 10 g
- Egg - 1 pc.
- Salt - 10 g
- Sugar - 5 g
For filling:
- Meat - 100 g
- Red rice - 30 g
- Sunflower oil - 30 g
- Salt - 5 g
- Onions - 20 g
Prepare the right amount of ingredients. The proportions can be varied to suit your taste.
If you have regular rice, cook it in the usual way. If it is red, like mine, then it will need to be soaked in hot water for an hour or two. Therefore, it is better to cook it in advance. Send the meat to boil too.
The first step is to knead the dough. All ingredients used should be warm or at room temperature.
Pour fermented baked milk into a bowl, add salt and yeast. You can add a little sugar to quickly activate the latter.
Break the egg into the mixture, stir.
Add flour gradually, you may need a little more or less. The finished dough should come off your hands, but not be too steep. Cover it with a film and a towel on top, put in a warm place. In an hour it will rise. Tap and cover again, let it rise again.
Take care of the filling. Place boiled rice in a bowl.
Add boiled meat twisted with onions.
Pour in sunflower or other oil for juiciness. Stir the filling, adjust for salt.
By this time the yeast dough had risen. You can mold pies.
Cut the dough with a narrow sausage and cut into 60-70 g pieces. Roll out and lay the filling.
Pinch the edges of the patties tightly.
Put the semi-finished products on a baking sheet, first cover it with oiled baking paper.
Lubricate the patties with a beaten egg. Send to a cold oven, turning it on 160 degrees. Let the pies rise for now.
Then increase the temperature to 180 ° C and bake until tender, when they are browned.
Remove the finished pies from the oven. You can leave it on the board directly on paper, covering it with a napkin to soften and cool.
Homemade pies with meat and rice are ready.
