Lazy cheesecake with cottage cheese is a tasty, aromatic and delicate quick baked goods. It is similar to the famous and beloved cheesecakes, which are rich round buns with a curd center. The difference is that we bake one large product, which is cut like a pie and served in portions.

I highly recommend making such pastries for you for your homemade tea. This, however, is not very troublesome and insanely delicious.

Ingredients:

Dough:

  • Wheat flour - 250 gr.
  • Chicken eggs - 2 pcs.
  • Sugar - 100 gr.
  • Salt - a pinch
  • Sour cream - 250 gr.
  • Vegetable oil - 2 tablespoons
  • Baking powder - 10 gr.

Filling:

  • Cottage cheese - 400 gr.
  • Chicken eggs - 2 pcs.
  • Sour cream - 2 tablespoons
  • Vanilla extract - 1 tsp
  • Sugar - 100 gr.
  • Semolina - 2 tablespoons

To prepare a cheesecake, we need the most common set of products. I would like to draw your attention to the fact that we add vegetable oil to the dough, which, if desired, can be replaced with melted butter.

Another important point is the choice of cottage cheese, choose a dry one, which will not spread over the dough during baking. If your cottage cheese is not very dry, then wrap it in cheesecloth and put it on a sieve for a couple of hours so that the excess serum is glass.

You can use flour or cornstarch instead of semolina, but I like semolina better. Add as much sugar as you see fit.

To prepare the dough, beat the eggs into a bowl, add sugar. Beat everything with a mixer until fluffy and increase in volume.

Add sour cream. Whisk again. It is advisable to use sour cream of at least 20% fat.

Add sifted flour, salt and baking powder to the dough. Beat the mixture with a mixer at low speed or with a whisk until smooth. It should have a consistency like thick sour cream.

Pour in odorless vegetable oil and mix well with a spatula.

Line a form with a diameter of 20 cm with parchment. You can also cut the baking paper into strips and fix it on the sides with water or vegetable oil, so the cake can be easily removed from the mold without damaging the sides. If you do not cover the container with baking paper, then just grease the bottom and sides with butter or vegetable oil.

Pour the dough gently into the mold.

For the filling, place the curd in a bowl. Beat in the eggs. Add sour cream and sugar, stir.

Then add vanilla extract and semolina. Stir again. For a smoother consistency, punch through the curd mass with a hand blender.

In a mold on the dough, gently, with a spoon, put the filling in the middle.

Put the cake to bake in a preheated oven to 175 degrees for 45-50 minutes.

Take out the finished lazy cheesecake with cottage cheese, carefully remove it from the mold and cool. Next, cut into pieces and serve.
