Here is a recipe for an appetizer liver cake that will perfectly decorate any festive table. We prepare the cakes from pork liver; we use fried vegetables - onions and carrots as a filling. The cake is very soft and tender. This cake is easy to cut into portions. The height and diameter may vary depending on the size of the liver cake pan used.
Ingredients:
- Pork liver - 500 gr.
- Eggs - 3 pcs.
- Flour - 100 gr.
- Milk - 100 ml.
- Salt, pepper - to taste
- Vegetable oil - for frying
For filling:
- Carrots - 2 pcs.
- Onions - 2 pcs.
- Vegetable oil - 3 tbsp.
- Mayonnaise - 100 gr.
- Garlic - 2 cloves
- Salt, pepper - to taste
- Greens - for decoration
Prepare food.
Separate the liver from the film, cut into arbitrary pieces, put into a blender container. Kill until liquid.
Add eggs, milk, wheat flour to the liver composition.
Sprinkle the mixture with salt and pepper. Go through it with a hand blender to get a smooth dough.
Set a frying pan on the fire, brush with vegetable oil, heat. Pour in a small portion of the dough, smooth around the entire perimeter.
Fry liver pancakes for about 1-1.5 minutes on each side over medium heat. Oil the surface of the pan periodically.
Place all fried pancakes in a stack on a plate.
Prepare the filling separately. Cut the onion into cubes, grate the carrots on a coarse grater. Fry vegetables in oil until soft, about 10 minutes, then cool.
Mix mayonnaise with chopped garlic. Grease each pancake on one side with the prepared sauce.
Apply vegetable filling on mayonnaise, spread with a spoon. Place other pancakes on top, repeat the process. Thus, form a puff pastry cake with the filling.
Place it in the refrigerator for a couple of hours to soak. Decorate the top of the liver cake to taste before serving.
Then cut it into portions.
