If it turns out that the kefir is sour or has been open for several days in the refrigerator, and you doubt its good quality, let it go for pancakes. The taste of these simple baked goods will not be affected. The dough is traditional, with the consistency of thick sour cream, optionally flavored with ground spices. Knead and immediately in a pan, it will take about 15 minutes to fry and brown pancakes can be served.

Ingredients:

Sour kefir - 200 ml

Egg - 1 pc.

Flour - about 150 g

Sugar - 50 g

Soda - 0.5 tsp l.

Lime or lemon juice - 1 tsp l.

Salt, cinnamon - to taste

Vegetable oil - 50 ml

Step by step recipe:

Step 1 - To cook pancakes with sour kefir, take the products on the list. Use sour citrus juice (lemon, lime) or vinegar to slake baking soda. Also, soda is often replaced with a baking powder - then there is no need to extinguish. Adjust the amount of sugar, salt, spices to your liking, tasting the dough before baking. The recipe is suitable not only for kefir, but also for sour milk - yogurt, when the whey is separated and curd flakes are rolled.

Step 2 - Pour kefir not of the first freshness into a large bowl. In a separate container or on a spoon, pour the soda with lime / lemon juice or table vinegar - cover all the dry powder with moisture, stir to remove all the soda lumps in the resulting foam. Add the foamy mixture to the kefir and whisk intensively. The liquid immediately bubbles and becomes airy.

Step 3 - Next, drive in an egg and continue beating. Introducing a new product, each time we bring the mass to homogeneity. So now we completely combine the protein, yolk and kefir.

Step 4 - Next, throw in the flavor enhancers: granulated sugar, salt (plus ground cinnamon - an arbitrary step). Stir quickly again.

Step 5 - Pour wheat flour in parts and, preferably, pre-sifted. We spend all the time with a whisk in a circle, kneading a smooth and viscous dough.

Step 6 - The dough on sour kefir is no different from the usual.

Step 7 - Go straight to frying. We bake pancakes in a hot frying pan with heated refined lean oil - spread about 1.5 tbsp each. dough, blush from below, turn over and bake on the reverse side.

Step 8 - Serve soft, flexible pancakes on sour kefir warm - with honey, jam or sour cream.
