To stew chicken in a pan or oven, you need a sufficient amount of "moisture". There can be various sauces, gravies, seasoned mixtures. To simplify the process and quickly cook delicious chicken thighs (any pieces on the bone), I propose to do with a minimal set of products - we will simmer the bird in raw adjika of our own production.

Fragrant, with a high concentration of salt, pungency and spicy notes of adjika - from chopped vegetables. It contains a lot of spices and juices, so you don't need extra liquid, herbs and salt with pepper.

Ingredients:

Chicken thighs - 3 pcs.

Adjika raw - 250 g

Vegetable oil - 30 ml

Greens - 30 g

Step by step recipe:

Step 1 - If you don't have raw adjika on hand, mince or grind ripe tomatoes, bell peppers, garlic, chili, and an apple if desired. Toss with sugar, salt, spices such as smoked coriander with paprika, suneli hops, and vinegar. This adjika is good not only as a sauce / cold appetizer, but also as a rich mixture for stewing chicken, meat and fish. In addition to the spicy vegetable seasoning, take fresh chicken nuggets, some vegetable oil and fresh herbs for serving: dill, parsley, green onions.

Step 2 - Wash your thighs under running cold water, cut off the fat layers and transfer them to a paper towel - it will absorb moisture from both sides of each piece. Meat must be dry before frying. Then it will not stick and will be evenly crusted.

Step 3 - Preheat the pan, pour in the refined oil - give about half a minute for heating. We transfer clean and dry pieces of poultry to a hot and oily surface. Fry until golden brown on one side. We keep the temperature high.

Step 4 - Turn over and blush from the back side. Everything about everything takes about 5 minutes.

Step 5 - Fill the fried chicken with raw adjika, coat on top. Throw in lemon or lime wedges in random order. Boil, reduce heat and simmer the thighs in a frying pan under the lid for about 30 minutes. Pour a fragrant gravy once or twice or turn the pieces over.

Step 6 - Serve the stewed chicken in a frying pan, sprinkle generously with chopped herbs, optionally with a side dish. For example, it is very tasty to mix pre-cooked rice with spicy gravy.
