Pea soup with smoked chicken

In my family, various pea soups with smoked meats are prepared for lunch at least once a week, since my men simply adore it. Despite the rather lengthy process of cooking peas, all other ingredients in the dish cook relatively quickly. And if you manage to buy a variety of dry peas that does not require pre-soaking, then the whole process of preparing the soup can take you less than 40 minutes.

Ingredients for a 2 liter saucepan:

Smoked chicken - 200 g

Dry peas - 1.5 cups

Potatoes - 300 g

Onions - 100 g

Carrots - 1 pc.

Vegetable oil - 1 tbsp.

Salt to taste

Ch.m. pepper - taste

Greens - optional

Preparation:

1. To make Smoked Chicken Pea Soup, prepare all the foods listed. Wash the peas several times, cover with clean, cold water and leave to swell for several hours. If you have a special strain that does not require soaking, you can skip this step. Peel the onion, peel the potatoes and carrots, wash under running water.

2. Rinse the soaked peas again, cover with a liter of clean, cold water, put on medium heat and cook for 40-60 minutes. After a while, check it for readiness. Skim off the foam all the time, there will be a lot of it.

3. While the peas are boiling, grate the carrots on a coarse grater, cut the onions into small cubes. Heat refined odorless vegetable oil in a frying pan, put vegetables in it, fry for 3-4 minutes until soft and golden brown.

4. On a cutting board, cut the potatoes into medium cubes.

5. When the degree of readiness of the peas suits you, add chopped potatoes to it, continue to cook for 15-20 minutes.

6. Now add water to the pot. As soon as it boils, put the fried onions with carrots and smoked chicken cut into small pieces into the soup. If you like, add bay leaf at this stage, it goes well with the other ingredients. Cook for no longer than 20 minutes. Now the dish needs to be seasoned with salt and pepper to taste.

7. For some reason, many families do not add greens to pea soup, and it’s in vain - fresh or frozen dill is ideal for taste. We throw in the chopped dill, cover with a lid, turn off the stove and let the finished first course brew for 10-15 minutes before serving.

8. Pour pea soup with smoked chicken into portions and serve. It will be very tasty if you put a tablespoon of sour cream in each plate.
