A moderately spicy fried eggplant appetizer is delicious both just from the fire and chilled. If you can cook over an open fire, replace the pan with a grill or barbecue grill for a delicious smoky "smoky" flavor.

The degree of pungency can be easily adjusted on your own by decreasing or increasing the amount of pepper and garlic. The thinner the blue ones are cut, the less time is spent on everything about everything.

Such a simple and yet universal dish is combined with meat, poultry, fish, any vegetables and cereals.

Ingredients:

Eggplant - 2 pcs.

Garlic - 2 teeth

Flour - 40 g

Vegetable oil - 40 ml

Mayonnaise - 50 g

Fresh herbs - 20 g

Salt, black pepper - to taste

Step by step recipe:

Step 1 - To make fried eggplant with garlic and mayonnaise at home, take the foods listed. In early season, use a new crop. It is best to choose young eggplants with thin skin and still poorly formed seeds. If you think that salt and black pepper are not enough, add herbs (thyme, rosemary, sage).

Step 2 - Wash the blue ones with cold water and wipe them dry, divide them into circles of the same thickness: about 3-4 mm. Cut off the "tails".

Step 3 - Sprinkle the slices with fine salt and ground black pepper, rub lightly with your hands to cover each piece with spices on both sides.

Step 4 - Pour wheat flour onto a spacious surface and bread all the pieces one by one. Sprinkle a layer of flour on both sides, shake off the excess breading. The flour will hold the moisture inside and create a tasty crust on the outside.

Step 5 - Preheat the pan, pour in the vegetable oil (any kind, but refined). After 30-40 seconds, when the fat is heated, we spread the eggplant semi-finished products. We place freely, without joints. Fry until golden brown from the bottom, turn over and ruddy the reverse side. If there is a lot of oil, it is advisable to first move the fried vegetables onto paper, which will absorb the excess fat.

Step 6 - In parallel, mix mayonnaise with chopped herbs (parsley and dill), as well as garlic. We try, salt and pepper if necessary. Cover all the fried circles with the garlic-mayonnaise mass.

Step 7 - Serve the fried eggplant with garlic and mayonnaise, sprinkle with finely chopped fresh herbs.
