On the Internet, you can find many conflicting advice about creating custard pancakes with kefir and boiling water. Many novice culinary specialists, trying to make thin pancakes based on such a milk drink, get either torn pancakes, either thick, but not the end result that would satisfy their family and themselves for breakfast or afternoon tea. To prevent this from happening, follow the step-by-step instructions in my recipe and you end up with delicious, lacy pastries, perfect for serving with a hot drink: coffee or tea.
Never add baking soda! It is this ingredient that fluffs up the dough, gives it a bitter aftertaste, which is also transmitted to baked goods from it. In this recipe, boiling water takes the leading place of soda, which is why pancakes are called custard!

Ingredients:
Chicken egg - 2 pcs.
Kefir of any fat content - 1 tbsp.
Wheat flour - 7 tbsp.
Boiling water - 0.5 tbsp.
Vegetable oil - 1.5 tbsp.
Sugar - 40 g
Salt - 2 pinches
How to cook:
Prepare food.
Wash the chicken eggs in water and pat dry with a paper towel. Drive them into a deep container: salad bowl or bowl. Add granulated sugar and salt there.
Whisk thoroughly for 2-3 minutes. You do not need to beat eggs long and hard to get an airy foam. You just need to mix the whites with the yolks.
Pour kefir of any fat content into the container. If desired, the dairy product can be replaced with drinking yogurt without additives or fermented baked milk. Mix both masses thoroughly.
Stir in the sifted premium wheat flour. Beat everything with a whisk or mixer so that no lumps form.
Add vegetable oil to the prepared dough, mix and immediately pour in boiling water. In this case, it is necessary to instantly mix the dough so that the kefir base does not stratify and does not transform into small lumps.
After pouring boiling water, bubbles will remain on the surface of the dough - this is a signal that you did everything right. Then let it rest for about 15-20 minutes.
Grease a hot skillet with vegetable oil. Pour a ladle of dough over it and draw a circle with it. Bake 1 minute on each side on moderate heat.
Grease the finished pancakes with butter or simply put on a plate.
Serve the thin custard pancakes hot. Complement them drinks at your discretion.
