Today we are preparing one of the favorite dishes of the younger generation - minced meat and rice hedgehogs with gravy. The dish got its name from the grains that stick out of the meatballs in a funny way, resembling the needles of a hedgehog. True, they stick out only if raw rice is added to the minced meat, otherwise they are ordinary meatballs. By the way, for even greater effect, meat balls can be additionally breaded in rice grits.

It is better to fry the hedgehogs in advance so that they do not fall apart when stewing. As for the gravy, any gravy of your choice will do. The simplest option is tomato sour cream without vegetables. True, after stewing in gravy, the thorns of hedgehogs are almost invisible.

Ingredients:

Minced pork and beef - 600 gr.

Round rice - 100 gr.

Egg - 1 pc.

Bulb onions - 1 pc.

Tomato paste - 1.5 tablespoons

Sour cream - 100 gr.

Flour - 2 tablespoons

Vegetable oil - 50 ml.

Salt, pepper - to taste

Greens - 10 gr.

Water - 200 ml.

Sugar - 1 tsp

Prepare food.

Separate the onion head from the husk, rinse, cut into large segments and place in a blender container. With the kitchen machine turned on at full strength, beat the vegetable into the puree.

Combine the resulting mixture with minced meat in one container.

Rinse raw rice thoroughly with water and then completely remove the liquid. Mix half of the cereal with the minced meat, set the rest aside for a while - useful for breading.

Then beat in an egg into the main composition, sprinkle with salt and pepper to taste. Stir vigorously so that the egg mixture envelops the minced meat well.

In one plate, combine the desired portion of flour and the remaining half of the raw rice, mix. Roll small meatballs from the meat mass, roll each in breading. Thus, use up all the minced meat, getting many small balls, which, thanks to the rice breading, resemble hedgehogs.

Place a frying pan on the hotplate, pour in a sufficient portion of oil. After warming up, lay the workpieces on the surface. Fry them over medium heat, uncovered.

As soon as one side of the hedgehogs is browned, turn them over to the other. It is not worth keeping the meatballs in the pan for a long time, the main thing is to fry the top layer. They are fully cooked during the gravy stew.

In the meantime, prepare the fill. In a bowl, combine sour cream and tomato paste, add a portion of sugar, salt.

Pour in the required amount of water. By frequent stirring with a whisk, dissolve the sour cream and tomato as much as possible in the liquid base to form a smooth sauce. Taste the gravy, add the missing spices.

Fold the fried koloboks in a saucepan or a spacious frying pan, pour over the cooked gravy.

Place the container with the contents on the burner, cover with a lid. Simmer the meatballs in the gravy over low heat for the next 30 minutes.

Sprinkle the hedgehogs with herbs before serving.
