Delicious and nutritious soup with beef broth can be served for lunch for those who are on a diet and those who do not. It is cooked for 20-25 minutes, since there are no meat components in the composition. Potatoes and orzo pasta add nutritional value to the soup, which, when cooked, is very similar to rice. By the way, in Arab countries this pasta is called "bird tongues", so this first dish can be safely called "bird tongues soup"!

If desired, you can add fresh green or canned peas, beans, tomatoes, classic vegetables: onions and carrots. If you already have ready-made beef broth, be sure to taste it as it can be salty. Ideal would be a soup cooked on "Demiglas" - a multi-hour steamed beef broth made from bones. The aroma and taste of such a dish will never be forgotten!

Ingredients:

Beef broth - 1 l

Orzo pasta - 100 g

Potatoes - 2 pcs.

Carrots - 1 pc.

Bulb onions - 1 pc.

Canned peas - 80 g

Bay leaf - 3 pcs.

Salt - 0.5 tsp

Pepper to taste

Dill - 0.5 bunch

Prepare food.

Peel the vegetables and rinse thoroughly, cut off the spoiled areas. Cut the potato tubers into medium cubes and the onion into small cubes. Grate the carrots with small cells. If you wish, you can grate it with large holes, but then the soup will not acquire a beautiful golden color. Place all the cuts in the saucepan in which you are going to cook the dish.

Pour in the orzo paste. Replace it with thoroughly washed rice of any variety if you like. Add salt and bay leaves. You can supplement them with any other spices and herbs.

Pour in the warm beef stock and place the container on the stove top. Bring its contents to a boil on maximum heat. Then reduce heat, stir the soup, and cook for about 15 minutes until the potato slices are done.

Add canned green peas to the bowl 2-3 minutes before cooking. If desired, you can pour in the marinade from the jar in which it was stored.

Rinse fresh dill, chop it and add to the pot. Mix everything gently. It is permissible to press a couple of peeled and washed garlic cloves into a soup if you like a spicy taste and aroma. Cook the first dish on the stove for another minute and turn off the heat.

Pour the beef broth soup into deep bowls and serve hot along with salted pastries.
