Oatmeal cookies with kefir: tender and crumbly (does not contain oil, eggs and flour)

There aren't many healthy sweet foods out there, but this cookie is one of them. Very lush, tender and crumbly. Does not contain oil, eggs and flour, but abounds in nuts and dried fruits. The recipe is a real find for lovers of wholesome and healthy food.

Ingredients:

  • Oatmeal flakes: 300 g
  • Kefir - 330 ml
  • Honey - 2 tablespoons
  • Dried apricots - 70 g
  • Dried prunes - 70 g
  • Walnuts - 70 g
  • Cinnamon - 1 chips.

Prepare all the food you need. Now in stores there is a huge selection of oatmeal, but I recommend choosing a traditional type of cereal, the boil of which is at least 15 minutes. Such oatmeal is more healthy, unprocessed.

Honey is, of course, preferable to liquid varieties. Make sure it is a natural product and not some kind of surrogate.

Take nuts and dried fruits according to your taste or those that you have in stock. Dates, dried cranberries and cherries, raisins are perfect. And from nuts - hazelnuts and almonds.

Kefir is suitable for medium fat content, about 2.5%. If for some reason it is absent, then it can be replaced with any other fermented milk product: yogurt, fermented baked milk. And yet, before mixing all the ingredients, bring the kefir to room temperature. In this case, all products will "make friends" faster with each other and the dough will be more homogeneous.

In a large enough bowl, combine the kefir and oatmeal. Pre-check the cereals for the absence of impurities and "living creatures".

Leave for 15 minutes to swell. Of course, you can also use instant flakes, then the process will go faster - 5-7 minutes will be enough.

Pour in honey. If suddenly you have it thick, then you can warm it up a little in a water bath or in the microwave. Recently, an opinion has emerged that when heated, this beekeeping product releases carcinogenic substances. I have studied this issue for a long time and I can argue that it is not. Therefore, with a light heart, you can use it when baking.

Wash nuts and dried fruits very well, because in the stores where they are stored, whoever does not crawl on them. This is especially true if you buy them by weight, and not in their original packaging. Look also at how fresh and soft they are. Otherwise, soak dried apricots and prunes in hot water will add juiciness to them. The water can be replaced with cognac and soaked in it - the aroma of the cookies will be divine, and you should not worry about the presence of alcohol, because it will evaporate when baked.

Chop the nuts and dried fruits into medium pieces. Don't be too small - it's still more pleasant when you feel what you eat.

Add the cut to the cereal, plus a little ground cinnamon for flavor. The dough is almost ready. It remains only to mix everything well until smooth.

For my taste, there is enough in the recipe, but if you are a lover of very spicy, aromatic dishes, then you can diversify the bouquet of spices with vanilla, ground cloves and nutmeg.

Put the oven on preheat to 180 degrees. Line a baking sheet with baking paper and spoon small circles at a short distance from each other. When baking, the cookies will not increase much, so the distance can be 1-2 cm.

Bake in a well-preheated oven for about 20 minutes. It is important not to dry such cookies, so start checking the readiness after 12-15 minutes.
