Sunny, insanely fragrant and tasty, and even healthy pumpkin pancakes with apple. This is an amazing dish, I love it! It would seem that such simple ingredients, but it is incredibly tasty - really, as they say, Um Eat!
Even kids who don't like pumpkin eat these pumpkin pancakes with great pleasure and ask for more!
I did a double portion at once !!!
To prepare pancakes you will need:
Pumpkin - 600 gr.
Medium apples - 2 pieces.
Wheat flour - 4 tablespoons with a good slide.
Chicken eggs - 2 pcs.
Water - 300 ml. (can be replaced with milk).
Salt is on the tip of the spoon.
Vegetable oil - for frying.
Step-by-step cooking recipe:
1. Grate the pumpkin and apples on a coarse grater and mix.
Rinse the pumpkin well, remove the seeds.
Rinse the apples and remove the seeds. I didn’t remove my homemade apples.
2. Preheat a frying pan with 1 tbsp. vegetable oil, shift the mixture of pumpkin and apples, fill with water or milk, mix. Cover and simmer over medium heat for 10 minutes until the pumpkin is soft.
3. Let it cool to room temperature.
4. Add salt, eggs, flour to the cooled pumpkin with apples and mix well.

5. Heat up a frying pan with vegetable oil and cook the pancakes for about 3 minutes on each side until golden, sunny crust!
Then we spread the pancakes on paper towels so that the excess fat goes away.
