I want to share a very simple recipe for making pork shank. The meat turns out to be very soft, juicy, aromatic and with an appetizing ruddy, golden crust. The shank according to this recipe always turns out delicious.

For cooking you will need:

Pork knuckle - (mine weighs 1.3 kg)

Honey - 1 tablespoon

Rosemary - 1 tsp

Garlic - 2-3 cloves. (optional)

Soy sauce - 3 tablespoons

From spices: a couple of bay leaves, a couple of cloves, black pepper and allspice peas ..

1. Wash the shank well, clean off all the dirt.

We transfer it to a saucepan and fill it completely with water. Then we take out and put this water on the stove, bring to a boil. So we understood exactly how much water is needed.

As the water boils, add the shank. Wait again until the water boils and remove the resulting foam. Then add spices: salt, bay leaf, allspice and black peppercorns, a couple of cloves. We cover the roof and cook over low heat for an hour and a half.

Advice: if you have a knuckle over 1.3 kg. then I recommend increasing the cooking time to 2 hours.

2. The shank is cooked, we take it out and let it cool a little, but for now we will prepare the sauce.

Squeeze the garlic through a press, add black pepper, dried rosemary, soy sauce and honey. (honey can be replaced with French mustard). Stir and the sauce is ready.
